  • Chip Replacement Dilema

    Trying something new. I LUV guacamole. So today's lunch consisted of baked chicken and quacamole. I had to simplify the guac recipe by using sour cream, avocado and garlic powder. Tastes great. Knowing that I am addicted to tortilla chips, those are out. So I'm trying them with pork rinds and with cucumber slices (no, not together ).

    The pork rinds tend to break off in the guac, but add some salt flavor, more fat and a good crunch.

    The cucumber slices have a great crunch, no fat and they tend to bend in the guac.

    Both taste ok.

    What are your substitutes for chips?

    Mine is the cucumber slices with salt. I get the crunch and if I make them into sticks I can actually dip them without too much trouble.

      I cut cucumbers into diagonal slices (to make the pieces longer and a more interesting shape). I find they work great for dipping.

      Start date: 03/14/09

        Excellent! The sticks would be great for dips, the diagonals two!

        I'm thinking mybe cutting bell peppers into slices, they would work better as SCOOPS!

          Bell peppers are good for scooping - I used one to make 'soldiers' to dip into soft boiled eggs the other day!

          Celery might be good too.

              Red peppers are my favorites. Cut to make scoops for guac, tuna & egg salad also.

                I like cheese crackers...if you can control your intake of cheese, just a little 1/2" cube will melt nicely in the microwave on parchment paper (wax paper will make it STICK to the paper) and they come out nice and crunchy...taste like cheese-its
