      Well done for exploring some of the culinary delights that eating Atkins-style allows!!

      I often make 'caulirice' to eat with curries and my husband actually prefers it to 'real rice' as it doesn't make him feel so stuffed and bloated!

      My method for preparing it is dead simple
      Just grate raw cauilflower into a microwaveable bowl add a little salt, stir then microwave for a few minutes, stirring now and again till they are as soft as you like.

      You can also use it in fried rice recipes.

          No I just put them in a large bowl without water at all. Initially I covered them except for a small gap but it came out too wet for me, so now I don't cover the bowl at all.

          I do check it every minute and stir it around to cook evenly. If I cook it too long or forget to stir, the bits round the edge get a bit brown but are still edible

            Thanks I have just made a curry so will make some cauli-rice tonight to go with it (along with some legal raita) YUM!

                I knew it would be, Zara!!

                BTW I missed adding sultanas to my curries so once I got past the 4th OWL rung I sometimes add a few goji berries which have been pre-soaked in sugarfree syrup to 'plump up'.

                  I love calirice. It is perfect for stir fry. I also mash califlower and make mock shepards pie with it.

                    Oh what a wonderful idea Eli.... my mouth is watering just thinking about it. Now to find some.....
