Re: Whats on YOUR menu tomorrow?
I am not sure yet. I will have to yank out something from the freezer for supper. I am thinking beef steak. I buy them on sale and store them in there. Probably with some sauteed veggies. Hopefully I have mushrooms. I love mushrooms.
Here is a thread from the induction forum that kept going for a while. It has plenty of supper ideas in it

Re: Whats on YOUR menu tomorrow?
Well it will be hard on this diet. You need to have plenty of fat and protein. If you are OK with chicken that is great - just add butter or oil or mayo. Fish is good to eat too and eggs.
Have you been vegetarian?

Re: Whats on YOUR menu tomorrow?
I am Peruvian born, and the idea of lunch being the main meal of the day has stuck with me. I have a very light breakfast, big lunch, and maybe a side salad or some eggs for dinner.
I made my lunch for the week in the crockpot yesterday.
Curry beef stew with onions and mushrooms. Side is creamed cauliflower. It averages around 7-10 grams of carbs a meal and is VERY filling and delicious.5'4, Medium framed female.
Weight: 135/125/115
Exercise: Stroll leisurely around Miami Beach 1-3 times a week, between 4-8 miles every time.
Heavy weights (for me) slow burn method (Body by Science).

A big caesar salad with renée's caesar dressing (no carbs), grated cheese, real bacon, and if I get to the grocery store, toasted pine nuts instead of croutons!
Tomorrow, Susan's cabbage and hamburger soup. I am SO addicted to this, I ADORE cabbage! Even if it makes the house smelly!!!F44yrs young 5'7" SW172/CW152/GW140

Re: Whats on YOUR menu tomorrow?
Shmooziecat, yes the lasagna is great!!! Here is how I make it....
About 8 Zucchinis (thinly sliced long ways)
1 Can of tomato sauce (no sugar)
1 Can of diced tomatoes (no sugar)
Lots of mushrooms!
1lb Ground turkey or ground beef (i like the turkey)
1/2 green bell pepper
2 cups of fresh spinach leaves
1 container of full fat ricotta cheese
1-2 cups of Mozzerella Cheese
1 egg
1/2 onion
Italian seasoning/ salt and pepper to taste
Brown meats, add onion/pepper/mushrooms. Mix in tomato sauce/diced tomoatos/italian seasoning. Put ricotta in big bowl, add egg/spinach/italian seasoning.
Layer the zucchini slices in large cassarolle dish, put in layer of meat sauce, layer of ricotta mix, layer of mozzerella. Repeat. Until you finish with meat sauce/Mozzerella on top. Bake at 375 for about 45mins. Then broil top for about 4mins. Enjoy!!
You will find lots of zucchini lasagna recipes out there, and they are all done differently. This is my personal one, the family LOVES it and it dosn't even seems atkinsish!!

Re: Whats on YOUR menu tomorrow?
I was going to make another aubergine/bacon/cheese dish but the shops I went to had no nice aubergines (eggplants)
So it might be my one of my usual '2 standby meals' of meat/cheese rollups with sweet red pepper or chopped celery mixed with mayonnaise, cooked ham or bacon bits plus some chopped peppers which I always have in the fridge.Wondering how to get 'most' of your net carbs from your induction veggies?

No problem. I am very laissez faire with my recipes, so it's not exact at all.
I take about 3-4 servings of stew meat, one can of low sodium beef broth, one onion, garlic, and a packet of korma (if you don't have you can also just add curry and a bit of salt/garlic powder). Depending on what you have in the house you can add mushrooms, canned tomatoes (then just halve the broth) or peppers.
Set to low for about 10-12 hours...I suggest to eat with a bland side like cauliflower mash, as it can be a bit strong tasting.
Once you are in the nut rung of OWL I have an AMAZING coconut milk curry recipe that's really easy.
in a pan, brown some onions, garlic, add a can of stewed tomatoes, can of coconut milk. in another pan brown meat/chicken/etc and add to the mix. add one big tablespoon of curry powder and a sprinkle of extra tumeric and let it simmer. SO YUM!!! I have to suffer and make it for my hubby every week, so i can't wait to climb those darn rungs!!!!!5'4, Medium framed female.
