  • Atkins Sandwiches!

    Not really a "recipe", so I thought I'd post it here... I'm sure it will have been thought of before, but I'll mention it just in case.

    My darling wife came up with a great way for me to have "sandwiches". Simply use one or two nice crunchy lettuce leaves as you would a bread roll. Just pop the filling in, wrap it round and eat!

    It works for pretty much any kind of filling you would have in a sandwich: tuna/mayo, salmon/cucumber, ham, cheese and so on. Last week I joined in on the family "fajita night" by using lettuce leaves instead of tortillas and today I even had two cheeseburgers with "lettuce bread".

    I reckon tomorrow I'm gonna try a bacon "sandwich" for breakfast!

    I did this tonight with a sirloin cheeseburger from jack in the box! Well, they wrapped it for me, but I ate it.

      Jimmy johns' in Dallas will make a BLT wrapped in lettuce...pretty darn good. I just have to get extra bacon.

        Romaine lettuce leaves also make fine taco shells if you place the bulk of the meat along the spine.

          My co workers always looked at me funny for eating my burgers at our BBq's this way. It is all old news for me. I always have lots of lettuce in the fridge. I don't think I could eat a sandwich "normal" now.

            Besides it's a great way to get your green on hehe I like the flax meal "breads" but they usually leave me wanting the real thing... I do much better eating my veggies instead.

              I use the big portabella mushrooms for buns for sandwiches and pizzas. They make great buns. I make sausage, egg and cheese breakfast sandwiches, hamburgers, buffalo chicken sandwiches. They are awsome for mini pizzas just becareful not to over cook them or they do get a tad soggy.

                Don't forget though, that you can get really close to "bread" with the revolution rolls - they are a mainstay and very important to me. I have two almost every day in "sandwich" or burger form, or just one for bread and butter with my main meal.

                  We have a place here called The Habit. Lettuce wrapped burger is my fave with mayo, tomato, bacon, cheese and avocado!

                      This is a cool idea! I am definitely going to try it out next time I make some homemade burgers!
