  • Ahh...veggies

    It's a constant struggle for me to eat enough veggies. I eat them everyday and on average about 15 grams gross. The more I eat, the more full I feel and therefore, I don't eat as much.

    But I made tomorrow's menu this evening and have 22.5 veggie grams gross on the menu. I was a little disappointed to only get 10 fiber grams out of the menu. I am one that focuses on the fiber more than net carbs. I think fiber is VERY important to my health. But the 22.5 gross veggies is out of 36.3 total. I am hoping that is sufficient enough to satisfy the Dr. Atkins approach.

    Maybe I will eat some nuts for some added fiber.

    The Eskimos observed by Arctic explorer Vilhjalmur Stefansson clearly proved that eating a diet totally devoid of fiber is perfectly healthy. In fact, it is more healthy than eating a diet with fiber.

    alot of other people it may not hurt there gut to eat lots of fiber

    when you eat vegetables its good to eat them naturally and not like a V8 juice because naturally they have fiber in them that slows impack on blood glucose while if they were juiced they would hit blood glucose more

    and not only that fiber provides food for probiotics

    so maybe with lots of probiotics fiber could be good for you?

        I wish I had an answer for you.... but my problem is just the opposite... I could eat so many veggies... I bet I could eat 3 pounds of cabbage at one sitting...

        I grew up eating very little meat... my entire family eats very little meat... we used to make entire meals of pinto beans, cole slaw, onions, tomatoes.. and corn bread...

        or a pot of vegetable soup... and corn bread....

        (and that's not why I got fat.... I took care of that all on my own.. when I began buying my own candy... lol)

        so... it's the oppposite for me... trying to control portions of veggies....

        I could eat so much broccoli or califlower.. with butter... and maybe some cheese..

        I think my 'full' switch is still broken....

        ok.. back to your dilemma... they make you feel so full so fast that you worry you're not getting enough....

        are you eating them raw? if so that might fill you up faster... maybe steaming them would let you eat more without getting so full...

        (I'm thinking spinach... raw... a bag takes a while to eat.... steamed... I can eat it in about 4 bites)...

          Ok, I don't want to even eat breakfast. This is bad! I always want to eat breakfast. I don't know at this point if I am going to eat. I guess I will just wait until I get hungry.

          So if I eat today this is my veggie menu:

          For breakfast: 6 baby spinach leaves in my omelet
          1 oz of onions apprx to eat with my steak


          Lunch: 1 cup steamed broccoli
          1 cup cole slaw (no sugar) and it has some slivers of carrots
          2 cups salad with 4 slices of cucumber and 1 slice of tomato


          Dinner: 1.5 cups cauliflower pureed into "rice"
          1/2 cup of sauteed spinach

            BTW, I feel better when I eat fiber and I can't say it hurts my gut. It does not.

              If you want more fiber maybe eating some of the veggies with more fiber. Greens are great for you of course but if you are looking for a lot of fiber I would try jicama and pumpkin, artichokes...
              Nuts can add some fiber too.

                Artichokes...I always forget about them. And they are yummy. Maybe I will pick one up on my next grocery run.

                I am finally forcing myself to eat my breakfast at 10am. I guess my appetite is just really suppressed today.

                I am going to do another water challenge and try to drink 150 oz today again. I only drank 120 oz yesterday and was thirsty going to bed. Is it possible to become addicted to water?

                  Which OWL Rung are you on? If it's Rung 1, are you staying on Rung 1 to find your CCLL? I ask because I saw your menu:

                  For breakfast: 6 baby spinach leaves in my omelet

                  1 cup cole slaw (no sugar) and it has some slivers of carrots
                  2 cups salad with 4 slices of cucumber and 1 slice of tomato


                  Dinner: 1.5 cups cauliflower pureed into "rice"
                  1/2 cup of sauteed spinach
                  During Induction we ate 3 cups of Induction veggies. The lunch salad and coleslaw in your menu satisfies that veggie amount for Induction Phase.

                  During OWL Rung 1, we add 5 net carbs of any Induction veggie to the Induction menu.

                  1 cup steamed broccoli has about 3.6 net carbs
                  1.5 cups cauliflower has about 4.1 net carbs
                  1/2 cup sauteed spinach about 1.1 net carbs

                  (I used the USDA nutrient database values for raw broccoli and raw cauliflower, but used the cooked value for spinach because I'm assuming you measured the spinach after you had cooked it.)

                  So for your Rung 1, the salad and coleslaw PLUS the cauliflower is perfectly okay and within the standards Dr. Atkins wrote about how to do OWL Phase---without adding the other veggies like the cucumber, tomato, or onions.

                  Right now, you menu looks more like OWL Rung 1 (3 cups Induction veg + 5 net carbs Induction veg) + another 5 net carbs of Induction veggies.

                  Now, if you are hanging around Rung 1 and increasing your carbs to find your CCLL before moving to the other Rungs, then eating that is okay. I hung around OWL Rung 1 to find my CCLL before I moved on to the other rungs. But if you do that, you might find yourself swimming in a sea of veggies. So you need to get creative with your dishes, like pureeing some of those veggies for sauces or soups or "stealth ingredients" like chopped onion/celery/mushrooms in meatloaf, etc.

                    I've purposely scaled back my carbs. I found myself getting out of hand with other foods and not eating enough veggies. I really want to focus on that right now. I think my CCLL is between 35-40 grams but can't be certain.

                    I regret not spending enough time on RUNG 1 to get better practice on the veggie eating. I have found that is important to me than eating other foods, right now. But unfortunetly I can't say I am strict RUNG 1. Yesterday's menu was a lot like today's except I had 4 oz of unsweetened soy milk and a handful of almonds.

                      Oh, then you'll want to pay very close attention to your portions. So if you are doing OWL Rung 1----be sure it is 3 cups of the Induction veggies Plus 5 net carbs of Rung 1 veggies. That way your eating won't get out of control.

                      Alot of times, people mess up on OWL because they add "alittle of this or alittle of that" to their menus and those little additions of a carb or two of this or that add up and can possibly derail their OWL attempt---not particularly from a weight loss point of view but from an eating habit point of view. See, if you were an over-eater before you began Atkins, it's very easy for that over-eating habit to return by eating "alittle of this or a alittle of that" because that "alittle" starts getting more and more.

                      So be mindful of your amounts.

                        if I could figure out how to cook an artichoke correctly... I might try them at home...my friend used to do them... and I used to buy the marinated hearts... but never tried cooking a real one...

                          Yesterday I went insanely overboard with the cauliflower rice I made (was supposed to last 2-3 days :/ so I don't have your problem....


                          However how about adding tomato puree and jalapenos to some ground beef for a tasty mexican chilli or a taco salad. I just made this (added cauliflower to it too) and about two servings came out at around a net 30gs (15g each, almost 100% from the veggies).

                          water chestnuts and pumpkin are also higher carb and have good amounts of fiber.

                            I didn't eat my dinner last night because I ate a brownie, a real one. It was calling my name and I listened.

                            No one scold me please I did it knowing I wouldn't feel better. I could have lied and said I ate on course but I didn't. I tell the truth too much.

                            I can usually resist, telling myself I won't feel better but yesterday I didn't listen to myself.

                            So much for a veggie filled day. I left my cauliflower in the fridge for tonight to eat with salmon my husband is going to make for me.

                            But I figured out why I did it and have made a plan to help me. I hope it works.

                            Why do I torture myself? Because I can, that's why.
