I have an atkins cook book that i use from time to time and also get recipes of the internet for low carb menus. The recipes will say things like 1 serving = so much nutritional value etc or makes so many servings. How do you determine a serving by either weight or size?

the recipe will tell you how many serivngs it makes and usually what size it is using for those nutrtional info. such as in DANDR the giner flan says makes 6 servings under the times for each part of the prep and then at the end it gives the info for each serving. Since it is poured as a whole into a baking dish you will just have to practice your fractions and figure out what 1/6th looks likeby the book atkinseer

In the case of the flan, if you cut it in to 6 pieces, it's easy! Though I find you can get 8 slices.
it isn't about how many pieces one CAN get from a recipe it is about the given serving size for a recipe and the nutrtional info provided by the creator of the recipeby the book atkinseer

I don't usually care about the number of portions a recipe makes. I make the recipe, measure everything that goes into it, and then use the USDA database or NutritionData to figure out the net carbs in the whole thing.
Then I divide it to a "random" number of servings (random meaning that it might differ every time I make the recipe), and divide the total net carbs by the number of servings to figure out the net carbs per serving.
Sometimes I eat only one serving... sometimes I eat 1-2/3.
