  • How do you count your zucchini in fitday?

    I love zucchini, but I'm noticing that for the past few days I've been avoiding it because of how difficult it is to count it in fitday. The only choice for raw is "Squash, Zucchini, Baby, Raw". I'm not sure if that's the right one to count, but none of the other choices seem to fit me. I want to weigh/measure the zucchini raw, then cook it. It just seems easier that way, but I can't seem to figure it out. Help?

    That is the entry I use and I weigh my courgettes/zucchini raw.

    According to Jimmie 48's spreadsheet

    1 cup = 128 grams/4.5 ounces

        I use the listing, "Squash, summer, zucchini, includes skin, raw." Not real thrilled that the USDA doesn't have separate listings for zucchini and the various summer squashes but that's the closest one I think.

        ETA: I use the Nutrition Data site sometimes too as I like the other info it provides like glycemic load and inflammation factor.

            There is a LOT of info out there on inflammation and the damage it does to the body, organs and health.               Hmmm, I wonder if that's why my arm that was killing me for a month or so before I started Atkins quit hurting? Neat.

                how do you reccomend preparing zucchini as a lunch?

                I'm thinking cutting into slices and boiling into a soup thing. Or option 2 I was reading online was pan frying it.

                I'm looking for something that is quick, easy and has me coming back for more.

                The pan fried looks interesting. Just pop some butter in the pan and slice up the zucchini into chips and brown/season to taste right? Sounds good.

                  Empyre, I love pan-fried zucchini in olive oil, it's so good. With garlic is great too.

                    A couple of easy ideas. Start by slicing the zuke lengthwise.

                    Then brush with Italian salad dressing and bake at 350 until soft.

                    or

                    Schmear a little tomato sauce (Hunt's canned oregano & garlic works well) on cut edge. Cover with shredded cheese (mozzerella and parm are nice). Bake until cheese is bubbly and zuke is soft.

                    You still need a protein to go with your zuke for lunch.

                      I often peel and slice courgettes (zucchini) and sprinkle with spices then microwave till soft. Here it is a fan shape but sometimes I just slice it normally.



                      Then cover with chopped bacon and put back in the microwave for a minute



                      then cover with cheese



                      and put under the grill till bubbly and melted - yummy!

                          Eizellen, that looks yummy!

                          I've been thinking of trying zucchini with an au gratin recipe. I really miss au gratin potatoes, isn't that crazy considering I am now eating more cheese than ever before?
