  • Egg yolks...

    Hi!

    A friend comes over every so often and we make and share a meal together. She's slim and I'm trying to get there.

    Anyway, she makes some things only using egg whites. This may be an unusual question, but are there any good ideas on what I can make using the yolks that's legal on Atkins?

    I dont know about meals... um.. I like having eggs mixed with some cream cheese as a modified egg salad.

    Or just chop up the eggs yolks and put them in a salad

    Or just eat them as is with a pinch of salt - very tasty - the yolk was always my favorite part of the egg anyway

      Mix them with mayo, mustard minced onion and make a puree like you would use for deviled eggs and eat with pork rinds

          Maybe there is something to be found on this website ?

          Of course you have to find the recipes that are atkinsfriendly or try to convert them into atkins

            I think the easiest way to use them that they mention is this
            Egg Yolks in Sauces - Egg yolks make a very good thickener for sauces. Two or three yolks beaten lightly with a bit of cream will thicken 1 cup of liquid. The yolks should never be added directly to the hot sauce. First add a small amount, less than a tablespoon of creme to the eggs. Then spoon some of the hot sauce into the egg mixture. This process is called "tempering". Stir the yolk mixture into the rest of the sauce making sure you don't allow the sauce to boil

              If the egg yolks are raw, you can make hollandaise or bearnaise sauces with them. You can add the egg yolks to some cream and water, sweeten with the artificial sweetener of your choice, and bake it for custard.

                  I love the yolks, you can send them to me!! :yes

                  If they are hard boiled I will eat them just like that w/ a little salt and pepper, or use them on top of a salad!

                      Oh yeah, you can freeze raw egg yolks too. Put them in a container and put a tablespoon of water on top of them, cover and freeze. They'll hold for a few weeks. Just defrost them slowly in the refrigerator when you need to use them.

                        LOL, that was actually pretty darned good IMO!

                        You know, all this talk about yolks made me think about my dad, he found this little shop to buy eggs at where almost every single egg in a dozen would have a double yolk! He used to stop there and get eggs just for me because as a kid I refused to eat the whites, he would make me fried eggs and allow me to eat just the yolk part and throw away the whites! That is still my favorite part and it drives my BF nuts! Luckily now though I have a dog who is more than happy to eat the white part for me! :nod
