Hi all,
I'm going out of town for Mother's Day weekend to go see dh's mom, grandma and my mom. This is probably a super easy situation, since we will mostly be eating at dh's grandma's house, and they pretty much eat "real" food. My concern is that there won't be enough veggies for me to meet my veggie net carbs, not to mention healthy-for-me snacks around. Plus, they use coffee creamer in their coffee. I can bring my liquid sucralose, so no biggie there, and I'm thinking some heavy cream. (Can I freeze heavy cream for travel?)
I know I will have somewhat of a cheat on Sunday because Sky, my little baker girl, is really looking forward to baking a cake for me and her two grandmas. Her plan is to make a fondant cake. I won't eat the fondant--I hate the stuff anyway--but I don't want to turn down her cake. She's a pretty masterful baker/cake decorator for an 11yo, and it's something I really encourage her in. I'll pay for it, I'm sure, but a small piece is worth her self-esteem to me. I have a feeling I won't enjoy it though. I'm not a big cake fan anyway.
Anyway, with the cake coming up on Sunday, I want to make sure that I'm as on-plan as I can be while I'm away. I've got a few ideas: bring my own cut up veggies and salad, bring my own heavy cream/liquid sucralose....but that's all I've got. I'm not sure that I want to spread it around that I'm "on a diet", but I also don't want to eat like he|| for 2 days, kwim? I'm not sure I want to bring along artichokes and broccoli to cook, LOL.
Help? Ideas on what to bring/pack are welcome!
