Is the main reason other than the nutrients for needing so much vegetables just to make sure you get enough fibre????

That sounds good. I asked because you were unhappy for not losing weight. If you want help with that, you could post a menu.
To answer your question... We want vegetables for fiber, but also for the nutrients in them. They are full of vitamins and minerals, and the Induction vegetables are relatively low in net carbs.
