    hee hee!!!! so glad to see i am "practicing" my veggie challenge in such good company! we'll do REALLY well next week (for the practice record, we had fresh asparagus last night too

      This is HARD! I was "practicing" yesterday, and didn't come anywhere close to the 17 net carbs I was supposed to have in veggies. I had planned to have cauliflower with dinner and then a pumpkin dessert, but I was so full after eating the cauliflower that I couldn't eat the pumpkin. I've got to plan better. Those of you who are getting 20+ net carbs of veggies in, could you share what you're eating? I need ideas.

        yesterday i had 2 okra pods, 1/4 cucumber, 1/2 cup green beans, 1/2 of a med. onion, 1/2 cup pumpkin, 1/2 med tomato, 1/2 cup mushrooms and 8 oz. tomato juice.

          Hey Silly. Thanks for the invite. I rarely use fitday or track my totals so this will be good for me.

          By the time this challenge starts I'll be on induction. I'm stepping back after too much fun from our holiday.

          I'm not sure if there is a veggie out there I haven't tried so that part will be tough.

            Mary! Welcome to the challenge for sure, huh? I learned that during the last challenge. What seems like alot of veggies in reality isn't nearly enough! This will be good for you.

            Meena! I'll put you down for induction come the 22nd.

            Jimmie - You only ate 2 okra pods? I did make them last night like you told me to, not my favorite thing but I ate more than 2 of them! I think I'll try broccoli-rabe next week. They look interesting.

              OMG! I just realized you're a LALA Lander too! YAY! Well I just LOVE the Farmer's Market on Fairfax, HOWEVER, besides all the veggies they have all my favy places to eat and shop and spend money I shouldn't! LOL! So no, unfortunately I won't be going there, just to my neighborhood farmer's market they have every Sunday. I need to stay focused on just getting veggies and the fm on fairfax is just to darn tempting!

                      i told you they were better deep fried. try in soup/stew.

                          It's a good thing I have a week to practice, because I am a vegetable moron. I went from not being able to figure out how to get in 17-20 veggie carbs to going overboard (I found pumpkin, onions and tomatoes). Yesterday I screwed up a carb count and went over my daily carb allotment (luckily by less than 1 carb). Today I had pumpkin and cream cheese for breakfast and was so happy eating a ratatouille concoction I made at lunchtime that I filled up and had no room left for the rest of my lunch. I'm already at 19 carbs (almost all veggies) and I've had fewer than 250 calories today. I've increased my vegetables, and I'm loving it, but now my percentages are all out of whack. I hope I figure this out soon.

                            Not to worry Mary! You will figure it all out! Pumpkin is a good one for upping the carbs, avocados are good too. Try having some veggie with every meal so that you are able to spread them out during the day. Maybe that will help so you don't overload!

                                No problem C-Chan, I've got you on the list! Rung 1 is still OWL level, so you will need 17-20 net veg carbs each day.
