    Re: ~~~Winter Onederland Challenge~~~

Oh, I just noticed this thread had a page 3 to it lol. Welcome kimmykins and Punkin!! Glad you joined the challenge with us, you'll do great!

    Thanks for the encouragement, Elsie!

Rikki; those battery scales are sooo much trouble! Whenever I used one I would be between 1 - 3 pounds different just by standing different. I finally got a good doctor's scale that uses the balances - so much more accurate! It helps me keep track of my progress so much better. I think you might be able to find one for cheap - but they do tend to take up a lot of space!

Second mini-goal: 181 by Xmas trip to see in-laws in LA, size 14's!

      Re: ~~~Winter Onederland Challenge~~~

I think I woke up a bit down today but, I am not changing my siggy and I had put it back up to204.4 before this challenge, so I will wait and see what tomorrow holds in store. I have a feeling tom is around the corner, and also I think I have eaten several salty foods today. Just had a flax cracker with some provolone and salami, yum... really filled me up and I also have some soup cooking. I made it with some beef broth(1can, not condensed) then I also added one can water 1/2 can tomatoes with green chilis, 4 ounces smoked sausages, and 5 ounces shredded cabbage. It is simmering on the stove now.... I hope it will be yummy. I just kinda threw it together from what I had here...
Caution I BITE! clicky clicky..its tricky rikki!

        Rikki,

You will have to let me know how the recipe turns out because I am craving some soup and had no idea how to make it and keep it induction friendly.

its pretty good. I usually make it with the 96/4 hamburger meat instead of sausages and it is really good. Actually they are about the same. You get much more meat the otehr way though. I only used 4 ounces in this one because the sausage is much more fatty and has more calories.

But, for a great soup try this...

1lb hamburger meat browned and drained(i use 96/4 and it doesn't need to be drained)
          1 bag (10oz) shredded cabbage
1 can tomatoes with green chilis(make sure no sugar added)
2 cans beef broth(lowered sodium prefered)

it could use some onion too. A lot of times I will add zuchinni or whatever low carb veggies I have around too.

anywho, brown the beef(onions too, although they add carbs mostly I use onion powder) in a big soup pot and then add the cabbage to the pan to let it wilt some before adding the tomatoes and broth. then let simmer until the cabbage is really soft

Sounds yummy to me. I am trying to count my calories though.

According to what I can calculate (fitday) with the beef 95 lean, 788 calories for the entire batch, and there are at least 4 servings or more...I would say probably 6

OK everyone- wish me luck! I am going to OCharleys for dinner with some friends. I plan to bypass the rolls and alcohol, have a chicken salad with the dressing on the side so I can moderate the calories from it! I usually go to these dinners once a month or so with my friends from highschool. Usually 5 of us go! It is fun!!! Looking forward to getting up and exercising in the morning!!!! If we can keep this energy up through the challenge I am sure we will get to our goals and maybe more!!!!! Check in when I get back!!!

                  Rikki,

Maybe you could eat a little something before you go to dinner so you won't be so hungry! Good luck... I am with you in spirit. If you are ever in Kentucky holler and we will go to Ruby Tuesday as they have a great low-carb menu. Oh, I got my exercise in (30 minutes).

Great job, Rikki! And Awesome job with the 30 minutes of exercise, Deb!!!

I had a busy day and was stuck in traffic for half of it it felt like, so I ate way too little, actually, like 800 calories total. I make it a rule for myself not to eat past 7 pm no matter what so I didnt have a chance to eat too much, but then I didnt exercise much eeither. Did 30 minutes of an exercise video, and walked the dog once. So it should even out probably.

Tomorow morning I am leaving for michigan, I am nervous on the airplane because I know i will be hungry and I dont know if i should bring something with me or not... Anyway, I won't be online tomorrow so take care everyone!!!

Good job guys!! I haven't quite figured out how to keep everyone straight, so will just go with the generic "good job" for now.

I am on day 3. Doing well with the eating part. I didn't get my water in yesterday cause our well water is so awful tasting I can't drink it and I was all out of bottled water. My kids were sick yesterday so I couldn't get any until last night. I am all prepared today though. WILL get 100 oz in.

I just discovered that my follow-up with the sugeon isn't until a week from Thursday, but I was told to increase activity as tolerated. I think I will try some light exercise tomorrow. I can always stop if my incisions hurt.

                              Have a GREAT day everybody
