I've been assigned to make a hotdish for an "Old Fashion Lutheran Potluck" fundraiser this weekend. A couple families displaced by Katrina are now living here and this is to benefit them, as well as their school back in Metairie, LA.
I decided I'd like to do something fun like Jambalaya, instead of the traditional tator tot hotdish (or something along those lines). Here's the deal though, I've eaten Jambalaya but I've never made it. I think I found a decent recipe that's not too spicy - being from ND and MN, I don't want to overwhelm anyone LOL (although I personally love spicy).
Anyway, if anyone does make Jambalaya, can you please take a peek at this recipe and tell me if you think it looks decent? Ignore the rice, I swear I won't eat it myself! Thanks a lot
