  • Have to bring something for Thanksgiving to share!! AHH!

    Hey Everyone!

    I started Atkins without any support from my family. They were all 200% against Atkins (but knew nothing about it) and then they started noticing me losing and they *ALL* wanted to jump on with me...well they gave it a shot for about 2 days and then quit because "All I can eat is meat & cheese!! How can you live your life like that? It can't be healthy!" with the disgust look on their faces. (I gave them the book to read, and they said they did.....) So now that Thanksgiving is right around the corner and I have to bring something to share....I want something that will shock them, that they can have this on Atkins. It doesnt ever matter what it is side dish, main course, dessert! ANYTHING!

    What are you guys making for Thanksgiving? Or what is something that you've tried that makes you bend down on your knee and thank god for being able to eat that on this WOE! ROFL.....I just really wanna knock their socks off!

    I'd appreciate *ANY* suggestions that you could give. Thanks in advance!

    my favorite is green bean casserole - very easy. this recipe serves 2-4: 2 cans french cut green beans, 1/2 c alfredo sauce, 1 pkg carb options mushroom soup mix. mix together in casserole dish then top with fresh grated parmesan cheese and bake for 20 min at 400 deg. feel free to make the alfredo sauce yourself if you question it's acceptability on induction.

      what phase of Atkins are you on?

      look in the low carb cooking lessons section i think an entire thanksgiving meal is in there with recipes too.

      you can always bring a cheesecake you baked yourself.

        I'm doing extended induction. I've tried alot of those cheesecake recipes and they just taste like cardboard to me. But I could be making them wrong.

        The green bean casserole sounds yummy. I love green beans too. But I thought those werent on the OK VEGGIE list???

          green beans are induction friendly as are string beans the not allowed beans are the dried kind like pintos or kidney.

          You can make panna cota and flavor it or you could make pumpkin pie with real whipped cream

          you can do faux taters chicken wings

          a cheese ball with veggies for dipping
          how about a spinach or a crab dip foir some veggies?

            Well, based on my recent cooking expeditions I can highly recommend

            Mock rice stir fry (nabbed the recipe from Dreamof145)
            BikerGoddess pizza (obviously from BikerGoddess)

            From Linda's low carb recipes I reallly like the fresh tomato & basil quiche and the chile relleno casserole. There are LOTS of recipes there, so you might want to experiment before Thanksiving...

              There is a recipe in the desert section for flourless chocolate cake that my family scarfed down, and had me make another. It is truly amazing.

                  Ask Sadie147 for her pumpkin cheesecake recipe, if you follow the recipe no one will even know and on top of being yummy it is beautiful as well!

                    This one ROCKS and my whole non-Atkins family ate it this weekend and LOVED IT! Actually anything I have tried on the site listed as a source for this has been good and she marks the induction legal recipes with a *. You will knock their socks off with this one...



                    JUST LIKE STUFFED BAKED POTATOES
                    16 ounce package frozen cauliflower *
                    8 ounce cream cheese, softened
                    8 ounce cheddar cheese, shredded
                    4 green onions, chopped
                    1/4 teaspoon salt or to taste
                    1/4 teaspoon pepper
                    6 pieces bacon, chopped and fried until crisp
                    Paprika, optional Cook the cauliflower until soft, about 8-10 minutes; drain very well and break up florets a bit with a spoon (it's also very good if the cauliflower is still a little chunky). Put in a greased 8 x 8" baking pan or 2-quart casserole. Mix in the cream cheese, cheddar, green onion, salt, pepper and bacon. Dust top with paprika, if desired. Bake at 350º for 20-40 minutes, until browned and bubbly.

                    Makes 6 servings
                    Can be frozen
                    Per Serving: 324 Calories; 27g Fat; 15g Protein; 6g Carbohydrate; 2g Dietary Fiber; 4g Net Carbs

                        If your family doesn't believe vegetables are part of the Atkins diet, then I would suggest you bring a vegetable side dish to Thanksgiving---just to burst their "All the meat and cheese you can eat" misconception about this WOE.

                        Bringing something like a cheesecake or an egg-based dish will only reinforce their "all you eat is eggs, cheese and meat" mentality.

                          what about something with Pumpkin? I don't exactly have a recipe.. but I concocted a dish that's pumpkin on the bottom.. (with splenda of course)... and some heavy cream .. and an egg.. whipped together... then cheescake on top... baked about n hour.. and it was OUTRAGEOUS!!

                            My family just loved this cheesecake, no one could tell it was low carb, and it was really easy to make!

                              Appetizers--How about deviled eggs? I would second the veggie platter with dip, cheeses, olives, chunks of salami, pepperoni, Hot crab/spinach/cheese dip is goooood.

                              Toothpick steak bites dipped in some sort of dressing (on the side). I make one that is kind of like blue cheese spread and I grill the steak or chicken up and skewer it and just put it on a plate.

                              Meal- Ummm, I have made flax bread and made stuffing with that...I would not rank it great or jsut like the real thing, but it isn't that horribly bad. I like to make mashed squash or pumpkin and mix in cream cheese or cream, cinnamon, splenda if you like.
                              Broccoli or cauliflower with cheese....I like to cut up zucchini and yellow squash and thorw them in a baggy and microwave tehm for about 5 minutes. They get steamed and are better that way. Then I just throw on some seasonings, parm. cheese, and some butter....A side salad with chunks of cucumber, diferent colored peppers and tomatoes, chunks of blue cheese, walnuts, spinach, mixed lettuce, mushrooms...stuffed mushrooms with ground sausage, cheeses, chopped spinach and roasted red peppers....

                              Dessert- I make a baggy full of cream cheese/cocoa/chocolate whey protein/vanilla and other flavorings and pipe it out a baggie into little Hershey kiss size plops. I keep some in the freezer. When I am at home, I just put it flat in a baggie and shape it into a big candy bar size and break pieces off. Either way works fine since I keep it frozen and just take a piece when I feel like it...I have made the pumpkin pie cheesecake. Not my very favorite, but...it was well-received....How about some berries adn julienned mint with whipped cream on the side??
