  • Saturday What's for Breakfast thread??

    We always do dinner! Let's see what everyone is doing for breakfast!!

    I am making up a philly cheese steak type scrambled egg concoction. Diced up some peppers and onions, and leftover T-bone steak. Scrambled up with some eggs and topped with cheese! Yummmmmm

    I just had a couple of rashers of bacon and some mushrooms.

    I have since re-gained a bit of weight, but that is soon to be coming off again!

        Pizza toppings from leftover Dominos. I LOVE stuff like cold pizza and lasagna (wishful thinking) first thing in the morning.

          I had flax hot cakes with pumpkin butter, and fresh strawberries and yogurt along with my ice water and decafe green tea.

                I had 3 scrambled eggs with an ounce of Boursin mashed into the eggs after I cooked them. Pretty tasty, but my husband told me I have "death breath".

                    It's a soft french cheese. The type I bought has garlic and herbs, but there are other varieties. You can find it in the specialty cheeses area of the supermarket, and it comes in a small green and white box. Sooooo tasty.

                        Saturdays (and sometimes Sundays) mean I can get a little more experimental. Last Saturday I made "flapjacks", and have had leftovers periodically through the week. Now, these are not Induction Friendly, so close your eyes if that's where you are on this way of life. I find that cold, I can slice them in half and use them like "toast", and actually cook my eggs with a soft centre, because they sop up the yoke nicely.

                        The recipe, as I made it last week made six. This week, it made nine. I believe it has to do with not only the amount of water, but the weather or something, because I used the same 1/4 cup measure to put the batter in the pan.

                        Ingredients are: Bake Mix (I used Atkins, because I had some I bought on sale), ground flax seed, ground almonds, soy protein isolate, eggs, oil, baking powder and water. I put it all into fitday and then divided by six for the counts. It's not that bad, if you're only eating one (or possibly two). Should you be interested, I'll put down the proportions and counts at a later time (I don't have my notepad in front of me presently).

                        I've been thinking of splitting one and making a grilled cheese sandwich some time when I can't think of anything better to eat - maybe even for breakfast some morning! I would presume the more solid you cook them, the better they would slice. Haven't tried them warmed in the microwave, because I don't mind them cold (and the dogs like them, too).
