      Um...I just saw a post about pizza and it made me think of this. I'm going to the grocery at lunch and will pick up the ingredients for tomorrow night...and we'll make it a Friday Night Pizza Night! Yee Haw!

              That's what I was going to ask too! Great minds...

              What kind of sauce do you use Kat? I made this last week and couldn't find any pizza sauce that was acceptable, so I just used seasoned tomato sauce.

                Well, I make my own. (I come from an Italian family.)

                I buy a can of plain tomato sauce (and just verify that there is no sugar in the ingredients just to be safe) usually the store brand for about 40 cents per can. I then sprinkle in a little salt, pepper, garlic powder (or fresh minced garlic), onion powder (or fresh/dried minced onion), oregano, rosemary, basil leaf (snapped in half), Italian seasoning and a tbsp of Splenda. This makes about two servings (if you're eating spaghetti) so you can figure it in with your sweetner limit. (When we make pizza there is usually some left so then I figure it as 1/4 of serving.)

                I put the pot (covered) on the stove and cook it on high until it starts boiling really good. Then I turn it down to low and let it simmer for about an hour or an hour and a half. (The longer you let it cook; the better and when you refrigerate it overnight it usually tastes even better the next day because the seasonings meld more into the sauce).

                If I didn't explain something clearly, just let me know.

                This is a VERY inexpensive meal to make.

                Oh...and when I make my DH spaghetti, I add browned ground beef to the sauce right before it is ready to serve. I put his on the noodles and mine I put in a bowl like stew. Yummy and I don't feel deprived. You can even make it with Italian sausage (if you can find some without sugar/corn syrup). I've even sliced up olives and put it in the sauce with the meat before. That is pretty good too!

                        Yes!! If you are used to eating Pizza on Friday (like we were), this really helps out so you don't feel so deprived.

                          We had the pizza last Friday and it was really good. Tonight we're trying the enchilada bake off Linda's site. We used to eat Mexican every Friday night before Atkins, so this will replace that.

                              My husband and I call ours Pyrex pizzas. We fill a 3cup pyrex dish with all the toppings and bake alongside the kids' pizzas (they pile toppings on Joseph's Oat Bran flatbreads).

                              For sauce, I dab a few pestos into the bottom of the dish. I buy them by carb count, but right now I have a basil pesto, a sun-dried tomato, and a tube of garlic paste. I then add a drizzle of olive oil and stir it all a bit.
                              <---Pyrex dish (with cover in case you can't eat it all)
                              Then we pile in the baby spinach leaves, followed by sausage, ham, mushrooms, onions, kalamatas, and feta.

                              On top of all of that, we pile the mozzerela and lay out the pepperoni slices (four rows of three fits perfectly) and shred parmesan over all. Bake at 410F for 15-20 minutes.

                              The funny part is that my husband doesn't even do Atkins. But he does watch his bread consumption and says that the crust is unecessary when you can make a pizza taste like this. Personally, I always thoguht the toppings were the best part anyway. When I was trying WW, I still made my pizza the same way, but with fat-free cheeses, turkey sausage and pepperoni, cut the olives, etc... This is just divine on Atkins instead!
