  • What would you bring?

    This weekend, my friend is having a party for her hubby because he's a Fireman and he's just been promoted.

    Dinner is 5 alarm chili and cornbread. I offered to make a salad, but I'm just wondering, what else would you all bring to help you stay on track? I've checked with her, and the only thing on the menu so far besides my salad, chili and corn bread is cake and cookies! What else should I bring? Ham rollups? Sausage stuffed mushroom caps? Any ideas?

    I thought about posting in the recipes forum, but I thought this might get more traffic here.

    what if you made celeraic au gratin?

    Instead of thin sliced potatoes, slice celery root thin, place in layers, and bake in cream and shredded cheese. (I actually saw this on Take Home Chef).

    You could also make meatballs or little sausages. A Veggie tray is ALSO a great idea.....

    These are all things that fit with the menu, yet taste great and are legal.

        I think the mushroom caps sound great, or a veggie tray would be good with a couple different dips maybe a taco type one, a artichoke one, a ranch one, a low carb one etc. This way you can munch on veggies when you get an urge. You can do a search on low carb appetizers, some of them really sound good. It sounds like with the chili veggies will be needed to cool things off lol. If you want easy deviled eggs, maybe bring a low carb dessert, maybe taco meatballs, or such. I love recipes unfortunately i don't cook very well lol.

        If you are adventurous, bring a little bit of a couple things and use the guests as ginnie pigs for the recipes lol. This would be a great time to try some things you have been wanting too.

          Cook up some spaghetti squash at home and pile on some of your own homemade chili topped with cheese and onions. I think this is called Cincinatti Style chili. Anyways...my hubby likes it

            I've done crab stuffed mushrooms
            I've made the green enchilada chicken casserole off of Linda Sue's site--chop the chicken fine and serve it as a dip with tostitos for the non-Atkins folks.

            Deviled eggs (boat loads of them...everyone eats those...at least all my friends do)
            Meatballs

            Summer Squash or Zucchini casserole made with ground almonds instead of crackers was a hit at a party once.

            ham/cream cheese pinwheels are always a hit.

            Not knowing what's in the chili, you'll want to make sure there is something meat/fat combo for you as well as the salad.

                  Oh, I forgot jalapeno poppers are always a big hit!

                    I'm a big fan of the buffalo wing dip- I make it for all sorts of get-togethers.

                    4 each boneless skinless chicken breast
                    16 Ounce(s) cream cheese
                    1/2 Cup(s) 1/2 to 3/4 or to taste hot sauce
                    8 Ounce(s) sharp, shredded cheddar cheese
                    12 Ounce(s) Blue Cheese Salad Dressing

                    Boil enough water to cover the chicken breasts in a large sauce pan.
                    Boil the chicken until its cooked through, about 15 minutes.
                    Remove the chicken, pat dry, and shred with a fork.
                    Place the shredded chicken in a large baking dish. Use 2 8"x8" casserole dishes, or one large lasagna-size one.
                    Pour desired amount of hot sauce over the chicken, and season with salt and pepper if desired.
                    Set this dish in the refrigerator to let the chicken absorb the flavor while preparing the remaining ingredients.
                    Preheat the oven to 350 degrees fahrenheit.
                    While the oven is warming up, melt the cream cheese over medium heat in a sauce pan.
                    Pour the blue cheese dressing into the cream cheese and stir until they are completely combined.
                    Pour the cream cheese/blue cheese mixture over the chicken.
                    Bake for 10 minutes.
                    Remove the pan, but don't turn the oven off.
                    Sprinkle the cheddar cheese evenly over the top and return to the oven for another 10-15 minutes, until the cheese is melted and starting to brown just a little.
                    Stir if desired.
                    Serve hot or cold with any dippers.
                    It's important to shred the cheddar. It will separate but more so if it's chunky. When it's cooling I sometimes pat a paper towel on top to soak up any grease.

                      Miss Phode, having tried your recipe for the stuffed mushroom caps, I think you should take them. But could you add chilli to the stuff you stuff them with?

                        Wow! I didn't expect so many responses. Thanks guys. Lots of good ideas. I'll have to print out your recipes and decide what to make.

                        Rich, that's not a bad idea either. I could add chile powder or chopped chiles in adobo. I'll have to think about it.
