  • what replaces chicken soup?

    When you aren't feeling good?
I"m about to go home and can't have chicken soup, or tomato and grilled cheese. Any suggestions?

I've always made chicken soup without noodles, because I don't like soggy noodles.

        This looks yummy!

        3 small carrots, sliced, 3 ounces *
2 chayote squash, peeled, seeded and cubed

Heat oil and butter in a 4-6 quart soup pot over medium heat. Add chicken; cook and stir 4-5 minutes or just until no longer pink. Add all of the vegetables. Cook and stir 7 minutes. Add broth, bouillon, water, parsley, pepper and salt. Simmer, uncovered, 10 minutes or until vegetables are tender. Add cream, if desired.

This is a variation of Nancy's Easy Chunky Chicken & Vegetable Soup. I left out the noodles and added chayote squash, which make a good substitute for potatoes, but have very few carbs.

You can certainly make homemade soup like that above. Just use some Chicken broth in a can and add legal veggies and chicken pieces. Yummy!

I usually just throw a can of chicken broth in a mug and heat it up. Does the trick for me.

Lately I've been putting some broccoli and chicken broth in a pan to boil, and when the broccoli is the way I like it I pour in a tad bit of cream and throw in some cheddar cheese. Tastes yummy, and is comforting. However is you are feeling flu sick, I do not recommend, this is more of a 'it's really cold outside' kinda comfort food.

Great ideas, i didn't even think about just removing the noodles or the broth and veggies and chicken.

                  Re: what replaces chicken soup?

If you're not feeling well, you could pickup a precooked rotissere chicken some frozen veggies and add to a chicken/veggie broth and cook for a bit...pretty easy soup actually. Lately I have found that organic store bought stocks seem to have less salt and additives than Campbells.

                      Re: what replaces chicken soup?

I second Higgies and Sadie's suggestion: buy a few cans of chicken broth. When you get home heat it up, you'll have a nice broth to sip. If buying a rotissiere chicken and using that meat is too much for you, you can make your broth more substantial by beating and egg, and stirring it into the simmering broth----you'll get an 'egg drop' soup that way. Add salt and pepper, etc.

As for drinks, if you have whole flaxseeds you can make a flaxseed tea:

                      1 tablespoon flax seed
                      1 pint water

Simmer the flaxseed in the water for about an hour. Strain it and add lemon juice and/or sweetener to taste.

This is an old recipe I found in an old book for the care and treatment of the infirmed and invalid. Allegedly this tea is " excellent for croup, or for any irritated condition of the throat of lungs."

                          Re: what replaces chicken soup?

When I have a cold I like something spicy to help clear my congestion. One of my favorite soups is Tom Yum. It's a thai dish and pretty common, so you could probably head to any Thai place on your way home and get it to go.

Or if you want to make your own sometime I found a recipe at http://www.thaitable.com/Thai/recipes/Tom_Yum_Goong.htm

                          It uses

                          4 cups water
                          1 cup shrimp
                          5 mushrooms
                          1-2 limes
                          1 lemon grass
                          3 kaffir lime leaves
                          2 tbl fish sauce
                          5 sprigs cilantro
                          3 chili pepper
1 tbl nam prig pow, optional (aka nam prik pow)

I'm pretty sure that even makes it induction legal as long as you don't hit the lime juice too hard
