    I LOVE pumpkin!! I'm down to four cans. Apparently, there was flooding in the pumpkin fields in the midwest where they're grown. There are 2 things in this world I must have for my WOE, pumpkin and spaghetti squash. I cannot compromise. I am sad without either one! They're both a bit carby and I can fill up with them and still not see a gain. In fact, I lost most of my weight eating them both up! Signs line the shelves at the grocery store apologizing for the shortage of pumpkin and saying the shelves will go unstocked with it until August. UNacceptable.

    I have been to countless stores hunting for pumpkin. All of the old ladies (sorry, no offense old ladies!!) bought up all of the pumpkin supplies between Thanksgiving and Christmas. All of the seasonal users have deprived this daily faithful user of pumpkin. Then, I come here and read all of these posts about pumpkin. It's torture, people!! Induction Boy wants to taste a low carb pumpkin pie but in my pumpkin greed (and NO supply) how can I put him first and share my pumpkin?! I simply cannot.

    So, last night I went out on a limb. I messaged Glenda and asked her if she thought I was crazy for wanting to spend $150 online to buy 5 cases of pumpkin!! She messaged back, buying pumpkin online, what's this world coming to?!

    This is going to be quite a heavy shipment!! Each case has 12 cans, the 29 ounce can. I aint playin'. I need my pumpkin fix. Shipping was only $11.95 and I think I got a steal!! Ultimately, I'm only paying 20 cents more per can than I would have here at the store and considering the no supply and my huge demand, I am now a happy camper awaiting my delivery!!

      Yes, that was me. I bought 4 cases of Libby's 29 oz. cans early in November from my local wholesale club (BJ's) for cheap.

      People looked at me kind of weird figuring I must be making a LOT of pies. Only made one LC pie at Thanksgiving. Been using the rest in MUP, pumpkin mash and soups.

      I don't think you're crazy for buying it online.

        I love it too - I have a MUP for breakfast almost every day Someone posted (was it you?) about the possible pumpkin shortage a few months ago, so I stocked up, but I haven't seen a shortage here. I've still been buying a few cans everytime I'm at the store "just in case" I'll have to check if my pumpkin is grown in Canada...that might explain the lack of a shortage here.

        I also use the 28oz (in Canada, the can sizes are often a bit different than in the US) can. I looked at Costco when I first got my membership & was disappointed that I can't buy pumpkin by the case!

        If I couldn't get it...I'd buy it online in a heatbeat at those rates (20cents a can diff doesn't seem like much compared to giving up my MUPs!!)

          I ran out to day and thinking about stopping at COSTCO to see if they have any. My store hasn't run out but I keep thinking I should stock up. LOL

            Maybe I should have stocked up better. After the scare I only bought 3 cans...LOL.

            Yes, the rains were pretty bad...a lot of the pumpkins are grown here in Illinois, and it rained almost every day from the second week of October till the end of the month! It just flooded out the fields and whatever else happened that contributed to the ruined crop...I guess they basically spoiled before they were ready to be harvested, and even if they hadn't gone bad, the fields were not navigable.

              Oh Ever, we are most certainly, without a doubt twins!!!!

              The only way I can eat pumpkin though is with cinnamon and stevia...I'm allergic to all forms of dairy so mixing it with cream chesse or anything like that I can't do.

              I can have eggs though....any suggestions of a nice recipe (dessert recipe) that would work for me?

                Pumpkin custard is tasty. Just sub 1-3 beaten eggs for the cream cheese and add a little cream in the MUP recipe.

                  Sadly I can't have cream either though because it's dairy, my lungs start to shut down I'm so badly allergic to all forms of dairy.

                  Would the recipe be ok without cream?

                  Btw...what is a MUP? Is that like a mock danish or or something like that?

                    Sarina,

                    Here's a copy of Mitzi's earlier posting of the recipe today. Do keep in mind this recipe can be tweaked a hundred different ways. I've actually never used the cream cheese in mine, only heavy cream and I know you can't have that but I've made it without it too. You do need to add fat to it, so I always throw in the butter, just depends on how much fat you want to add. It's wonderful. Love it!!

                    Here's the MUP recipe:

                    MUP is a name that one of the members gave to a recipe I came up with... it stands for Mitzi's Ultimate Pumpkin. I have even been dubbed the "Pumpkin Patch Princess" by another member (and she gave me a really cool graphic saying that, for my siggie).

                    About the pumpkin - I use Libby's canned pumpkin that is probably located next to the baking items in the grocery store. Make sure to read the label carefully so that you pick up the 100% pure pumpkin and not pumpkin pie filling, which is also made by Libby's and looks a lot like the pie filling, which has sugar in it. Here is the recipe for what I eat:

                    In a bowl, I mix 1/2 of a can of pumpkin (which is .88 cups) with 2 ounces of cream cheese. I put this in the microwave for 1 minute, then take it out and stir well. I then add a few drops of liquid Splenda (just use sweetener of your choice), 1 teaspoon of cinnamon, .5 teaspoon of allspice, .5 tsp. of nutmeg, and stir. Once I passed rung 3 in OWL (seeds/nuts), I started adding 1 ounce of almonds, which is about 22 nuts that I cut in half (so I can have 44 nuts ). I then put it back in the microwave for about 40 seconds, stir, and it is done. As Ev indicated, it can be eaten warm or cold. Beware, though! This concoction contains 15 net carbs. So anyone who doesn't want to use up that many carbs can leave out the nuts and/or cut back on portion sizes of the ingredients. I ate it for a long time without the nuts, and it is good that way, as well. It does have a high fat percentage because of the 2 ounces of cream cheese, but I don't stress over that. Lots of people get by with only 1 ounce of cream cheese, but I like how creamy it is with the 2 ounces. This makes a pretty big bowl, too, so you may not need to make this much. My husband always talked about how good it smells when I make it, so I made it for him one day. He couldn't finish it all because it is kinda rich. Cutting this in half would have been enough for him. I always finish mine, though.

                      I laughed my butt of in the store today as I picked up a few cans of pumpkin. My mom looked at me like I was nuttier than usual so I had to explain what was so funny. Her only comment was "You sure find the wackiest friends don't you." We all know where to converge if the Great Pumpkin doesn't show up!!

                        Um, yeah, well it's probably best Oz if your mother and I never meet!! Induction Boy has been hearing your name a lot lately and he finally asked, "Who the heck is this Glenda you keep talking about?" I told him you're my low carb support from the eastern seaboard. That explanation didn't help him any!!

                        Wow...still finding pumpkin on a shelf. I've almost forgotten what that looks like! I warned my mother today our mailbox at the UPS store would be receiving a buttload of pumpkin. I didn't want her to freak out if she found it before I did!

                        So, here's another recipe. The pumpkin treat I make is more similar to this one than MUP, yet at the same time they're pretty similar. Did that even make sense?! This was the first pumpkin recipe I ever tried and it's very easy. Took me FOREVER searching through thread to find it as I now make it from memory. I heat mine for much longer and when done cooking, I add flax and the butter in the recipe soaks it up!

                        Mix the following together:

                        1/2 Cup Libby's Pure Pumpkin (NOT pie filling which has sugar)
                        1 Tablespoon butter
                        1 Tablespoon heavy whipping cream
                        1/4 Teaspoon pumpkin spice
                        1 Packet of Splenda

                        Heat in the microwave for 15 seconds. Stir. Heat another 15 seconds. Yummy. (Note - heating times may vary slightly depending on microwave)

                              Well, the delivery has arrived!!

                              I now have 60 huge cans of pumpkin on the kitchen floor. When I went to the UPS store to pick them up at our mailbox, the manager asked what on earth was in those heavy boxes!! I told her the story. She loved it!

                              So....60 cans and roughly 6-7 months until the store shelves are stocked with pumpkin. I think I'm good!!
