    Use those cans sparingly...from what we heard here, there would be enough canned pumpkin for this past season and for several months ahead.

    There was a shortage of Halloween carving pumpkins this Fall because of the flood.

    But what will suffer is making enough canned pumpkin for the next holiday season, because they would have used the crop that was partially ruined this year for next years canned products.

      Yep, keeping my eye on the supply and might order some more when I can dedicate some more money to the cause! The stores I've been to lately have promised to restock by August per the people at Libby but I'm not counting on anything. I just never would have thought I wouldn't be able to get my hands on any. Felt somewhat relieved to see the expiration date on the cans is 2012. Induction Boy has discovered low carb pumpkin pie though, might need some more to get both of us through!

        Here's the MUP recipe:

        MUP is a name that one of the members gave to a recipe I came up with... it stands for Mitzi's Ultimate Pumpkin. I have even been dubbed the "Pumpkin Patch Princess" by another member (and she gave me a really cool graphic saying that, for my siggie).

        About the pumpkin - I use Libby's canned pumpkin that is probably located next to the baking items in the grocery store. Make sure to read the label carefully so that you pick up the 100% pure pumpkin and not pumpkin pie filling, which is also made by Libby's and looks a lot like the pie filling, which has sugar in it. Here is the recipe for what I eat:

        In a bowl, I mix 1/2 of a can of pumpkin (which is .88 cups) with 2 ounces of cream cheese. I put this in the microwave for 1 minute, then take it out and stir well. I then add a few drops of liquid Splenda (just use sweetener of your choice), 1 teaspoon of cinnamon, .5 teaspoon of allspice, .5 tsp. of nutmeg, and stir. Once I passed rung 3 in OWL (seeds/nuts), I started adding 1 ounce of almonds, which is about 22 nuts that I cut in half (so I can have 44 nuts ). I then put it back in the microwave for about 40 seconds, stir, and it is done. As Ev indicated, it can be eaten warm or cold. Beware, though! This concoction contains 15 net carbs. So anyone who doesn't want to use up that many carbs can leave out the nuts and/or cut back on portion sizes of the ingredients. I ate it for a long time without the nuts, and it is good that way, as well. It does have a high fat percentage because of the 2 ounces of cream cheese, but I don't stress over that. Lots of people get by with only 1 ounce of cream cheese, but I like how creamy it is with the 2 ounces. This makes a pretty big bowl, too, so you may not need to make this much. My husband always talked about how good it smells when I make it, so I made it for him one day. He couldn't finish it all because it is kinda rich. Cutting this in half would have been enough for him. I always finish mine, though. __________________

        Wow I have been making this for years. I started this back in 2004. The only thing is I never added the nuts. I also just used a tsp of "pumpkin pie spice" cuz it had all that other stuff in it. The dashed some cinnamon. I love it.

            After finding these wonderful pumpkin recipes, I had to have pumpkin. I went to Albertson's, Smith's, Costco, another Albertson's and one Von's. All Sold Out. I thought I was going to cry. I called several Walmarts, all out. Finally I called a Von's that was a little bit away and they said they had a ton of cans. I clarified "not the pie filling" and they said it was just the regular Libby's Pumpkin in a can. I raced to the store and bought all the cans. I am glad I did, because whoo wee do I Pumpkin!!!!! I have about 15 cans so I will have to use them sparingly until I can find more.

              I've beenmaking what I called pumpkin butter since back in 2002 and it is just a can of pumpkin a package of softened cream cheese and pie spice to taste. I like mine spicey so it had 8teaspoons in it. I don't need a sweetner cause to me cream cheese is sweetenough by itself but one can add as much as they want. I mix the spices with the softened cream cheese in the mixing bowl and then add the pumpkin. nuke it till it is hot cause those spices need to be activated to release their oils.

              then store covered in the frig. you can spread it on the OMM or flax hotcakes. heck I just eat it by the fingerful. I never thought about making it into a hot breakfast cereal by itself wow you guys are great pumpkin fixers.

                to make dairy free pumpkin stuff one can use a packet of softened gelatin and melted butter or whatever flavored oil one likes for the fat and then make pumpkin jello or pudding using the canned pumpkin, the spices and sweetner to taste.
                just heat 1 cup of water ( could use pie flavored DaVinci here or vanilli if you wanted but then cut back the water by the amount you add) to a boil. while it is heating soften the gelitan on 2T cold water. then mix the softened gelatin with the boiling water to dissolve.

                add the sweetner and spices and mix well then add the pumpkin and stir well. remove form the heat and add the fat. pour into molds or a 1 qt bowl and refigerate till firm. I put it in those individual jello dishes I have left over from high carb days cause portion control is an issue ofr me and if I am having one then that is the serving.

                You could try folding 2 beaten egg whites into the MUP without the cream cheese and then nuking to cook the egg for a tasty pumpkin bowl. or add 2-3T of flax seeds ground to the recipe and nuke to make a pumpkin muffin.

                  Thanks for taking the time out to write and give me these ideas, I appreciate it! I have some Agar, Agar (seaweed gelatin) and I'll have to give that a whirl.

                  I make rhubarb jello doing it this way, never thought about using it with pumpkin...thanks!

                    Another Pumpkin recipe.

                    Please let me know what you think if you try it.

                    Pumpkin Mousse

                    2 cup cooked mashed pumpkin (or canned pumpkin)
                    1 c whipping cream
                    3 knox gelatine packets dissolved
                    1 tsp cinnamon
                    1/4 tsp nutmeg
                    sweeten to taste ( I don't sweeten)

                    Whip all ingredients together, then pour into an 8x8 pan and chill. Cut into 16 squares when set.

                    Total net carbs per square 1.72 g

                        See....you're on your way to where I was after I'd been to many stores and phoned even more, only to come up empty handed. I just checked the site I bought 5 cases from and I'm getting NOTHING on the search result. Nothing. I did notice amazon was selling just ONE case for $159!! Sheesh.... I'll consider my pumpkin find a blessing and keep my eye out. Every now and then I go to froogle and search for Libby's canned pumpkin.
