Right now I'm leaning towards a FujiFilm E550. It's a 6.3 mp with a 4x optical zoom. And it's affordable and got good reviews.

Sounds like a good choice. If you can, purchase from somewhere that will take the camera back no questions asked for 10-30 days with no restocking fee. This way you can take some pictures and print them in the largest print size you think you'll be using to make sure you are getting the quality you need.
