As always, this challenge allows us to focus on the quantity of vegetables we all should eat every day. And to our good fortune, we can use full fat flavors to enhance them. Vegetables are low in carbs, chock full of vitamins and antioxidants, they fill us up and taste delicious.
This group did a marvelous job with terrific discussions, hints and recipes.
Everyone who completed and reported all 5 days made their quota of vegetables every single day.
I think we all learned the proper amount of veggies to eat daily, no matter what phase of Atkins we are on.
