When I began eating low-carb in April of 2003 (I was given a copy of "Easy Low-Carb Living" by Patricia Haakonson) I had been a vegan for nearly five years and a vegetarian for some time before that. Although I had skimmed DANDR (and have since read it from cover to cover) I figured that I couldn't begin with a proper induction since I couldn't bear the thought of meat right away. I started by re-introducing eggs, cheese and fish but continued to eat quite a lot of tofu for the first month at least until I was able to work my way up to a little boneless chicken breast.
Fast-forward to today: I rarely eat tofu anymore. I'm fine with all types and cuts of meat, even sausages/wursts and the like, which I had never been able to stomach even as a child. I've lost just over 50lbs (23.5 kg) but haven't had a significant loss so far this year. I have been trying to increase my exercise (good so far for the last two weeks) and track what I'm eating either on paper or using Fitday, sometimes both. After much denial and avoidance I have finally decided I'm going to have to do this properly, by the book, if I'm ever going to lose the rest.
So after watching
ha for awhile (and finding out that my scooter-buddy Carol is so active here :wave) I thought I'd take the plunge and introduce myself and hopefully get the encouragement to motivate me to give up my coffee, nuts and strawberries and do the induction I should have done ages ago.
