I was sort of sheepish about the whole forum thing, but I live in a small southern town and low-carbing is the devils work if you were to ask anyone in this town and support is hard to find. I tried Atkins initially in January and February of 04. I lost 40lbs in those two months but gave up shortly after and gained not only what I lost but also an additional 30 lbs. I am topped out at my heaviest now at 300 lbs and I am a 5 '8 female. My biggest problem is that I live alone, and to cook huge meals every day isn't really the most cost effective thing for me to do. I end up with more leftovers than I will ever finish before they spoil. I am a nibbler at the heart, which is part of my problem I suppose, and I was wondering if anyone could recommend any low carb snacks that are filling yet appropriate for induction? I'm looking forward to supporting and cheering you guys along. Bless!

Welcome to the boards!! And welcome back to Atkins.

Snacks on induction...I don't have much experience as my appetite diminished after the first few weeks, and I had to remind myself to eat meals. What I do at work if I have to work through my lunch break is to take sliced chicken or turkey or even beef, and nibble on that as I'm working.

Check out the list of acceptable foods on induction and don't stray from it at all. Fill up on as much as you can at meal times and before long you shouldnt have the need to nibble between meals. And by no means should you be cooking huge amounts! I don't live alone, but I cook and feed myself, and it's working out cheaper to buy and cook on Atkins that normally

    Good luck!!

Well, my best advice, is make that big meal and use it for snacks too. I will cook up a bunch of differant meats and use them for meals and snacks. Sliced turkey or ham or roast beef or steak or chicken make fantastic snacks as well as meals. Hard boiled eggs, sliced cheeses these are also good. Just make it easy on yourself and cook up a roast , beef or pork, and just eat on it for a week, you will be full and feel great and it is easy !! Stephie

Welcome back to this WOE. Hop right in here. I've found everyone to be very encouraging and supportive.

I don't usually make really big meals, but if I do have leftovers, I usually eat them for breakfast or lunch the next day. If it is still too much, often times I will freeze it and re-heat in the microwave later. For example, there was a really good sale on pork roast and I bought quite a bit, so what we didn't eat at dinner time, I've been snacking on this week. I also keep alot of hard boiled eggs around to either use as a snack or to mix with some mayo and a little mustard for egg salad (same with tuna) and I always keep fresh vegetables sliced and ready to eat whenever I feel hungry between meals.

Being prepared is the only way to go, imo.

        Good luck.

Glad you found us Kirstin. Actually I think you have an advantage cooking for one person, if you have others in the house they might want carbs, so you can keep the pantry carb free which will help with the cheating.

I agree with booklady, large meals can be great leftovers and you only have to cook maybe twice a week. Make a Tuna salad for lunch, so what if you have it for dinner and then maybe even breakfast. Make a crockpot full of stew or chili without beans and freeze some for next week. See how creative you can be

Glad you joined. Check out the food section and our cookbook at the bottom of the forum page. You will get tons of ideas there also.

WELCOME!! Happy you decided to join us. As for the 'snacks'...I made up baggies of chunks of meat (chicken, beef, pork, bacon, (sometimes even a hamburg patty cut up like pizza slices)/chunks of cheese/chunks of celery, green peppers/boiled eggs.

I'd keep these in the frig to grab when I was hungry between meals or on the go and didn't want to be caught without a back-up if I got hungry before I got home.

I still do this if I'm not sure if I'll make it home for my meals or if I am having a stressful day and want to be 'safe' from any temptations.

Best wishes to you!! Keep us posted on your success!!

Welcome songstories, to and back to Atkins!

I agree with the other comments, make enough to last a couple of days or maybe your evening meal and then for breakfast (I eat leftover dinner for my breakfast all the time!).

I do find actually prepping and cooking in the evenings, taking time cutting, slicing and such, is soothing and relaxing to me. And most important, I get away from that instant gratification that was easy before Atkins way of eating...going into the kitchen and mindlessly eating processed junk food, that was a problem for me.

Anyway, hope you get the chance to cruise around the board and get the feel, there are a lot of stickies and FAQs with tons of information! You'll love it!
