  • Lurker coming out of the closet

I am not new to Atkins, or this board, I have been a lurker for quite a while. I have used this WOL before very successfully. I have recently gained about 18 lbs and felt really frustrated that I let myself get to this point. At one time I weighed over 200 lbs and I just can't stand the thought of heading back in that direction. This is my third day on induction. I have been really sleepy and I'm having a difficult time with meal ideas. Thanks to everyone for posting, it's great for us lurkers.

I was going to try the no crust pizza this weekend but I'm not sure about the pizza sauce seems like it would have sugar in it?

Hi MendoGirl and welcome to ADBB!

Glad to have you with us. Your feeling sleepy could be a bout of induction flu which is when your body weans itself off carbs. This normally passes in a matter of days (or less) and then you'll suddenly feel full of energy! Hang in there.

Take a look at the food forums for menu ideas. Plenty of inspiration to be had there. Or check out Linda's site which has great low carb recipes: http://www.genaw.com/lowcarb/index.html The recipes with asterisks are fine for induction.

Keep posting... we're all agog to hear how you get along!

Hey Mendogirl. Welcome to the board. Come check out STAC or Second time around club. Since your already familiar with thie WOE. As for the lc pizza. If you use the Hunts spaghetti sauce in the can ( only a little) it doesn't have many carbs in it. But I wouldn't choose this during induction. You can nuke some pepperoni and mozzarella in the microwave and its a good treat though. The flu will pass though. Keep it up and you'll ring in the New year lighter and happier.

When you go to the grocery store, look at all the available tomato sauces (especially the plain canned type). Find one that does not list sugar in the INGREDIENTS. All of them will have some naturally occuring sugars listed under the total carbohydrate section, and that's okay. As I said before, look for SUGAR in the list of ingredients. Find one that doesn't have it. I've found, for the most part, that the store brands don't have added sugar.

If you want your sauce a bit "sweeter", just add a tad splenda to it (which will increase the carb count slightly). I've found that after a while of being on Atkins, so many things taste really sweet to me without adding additonal sweetners to them...and tomato sauce is one of them.

Welcome, MendoGirl! I'm so glad you came out of lurking and decided to join in on all of the fun! You've been successful before, I'm sure you will be successful again. Your symptoms of Induction Flu are exactly what mine were like when I started this WOE (way of eating). This will pass quickly, as you know, and you will feel wonderful!

Hi Mendo--glad you've stopped lurking and started posting!

As for meal ideas, make sure to check out the food/recipes forum, and go to Linda's Low Carb site:

As for some ideas off the top of my head--

SNACKS--pepperoni and mozzarella, celery and ranch, raw jicama, chicken tenders with ranch or buffalo sauce, cheese sticks. If you eat a snack, always try to include some fat and protein.

MEALS--grilled chicken, buffalo wings, steak, fish, shrimp, shish kabobs, salad with protein (chicken strips, bacon, hardboiled egg, whatever you choose), lettuce wraps (cheeseburger with looseleaf lettuce as the bun OR you can make "tacos" this way, too), omelettes with cheese and veggies, really the list is endless. Pick a healthy meat/protein source, and add a side of veggies!

Wow, thanks so much to all of you for the warm welcome this is much better than lurking.

Thanks JuliRama for all the snack and meal ideas, I have been having taco meat with cheese so often I just got stuck in a rut with it which I know is the surest way to "fall of the wagon" you can't make a WOL out of taco meat with cheese LOL.

I am deifnately going to check out the STAC club and the recipie web-sites. Again Thanks.

Re: Lurker coming out of the closet

I couldn't find a pizza sauce without sugar, so I tweaked this recipe and came up with a great one. It has so much flavor, that I don't have to use much. Hunt's tomato sauce and tomato paste has no added sugar, so that's what I use. I make a double batch and divide it up in small containers and freeze them--then I can pull one out and thaw it and make an individual pizza--this cuts down on eating too much as tomato products still have natural sugar. I also freeze the extra tomato paste and save it for other recipes.

                      Low Carb Pizza Sauce

                      2 tablespoons extra-virgin olive oil
                      1 tablespoon minced fresh garlic
                      1/4 cup finely chopped onion
1 cup tomato sauce (no sugar)
1 teaspoon dried oregano or Italian seasoning
                      1 teaspoon dried basil
                      1/4 teaspoon black pepper
                      2 tablespoons tomato paste

In a medium saucepan, sauté garlic and onions in olive oil until tender. Add seasonings and continue cooking a few more minutes. Stir in tomato sauce, and then tomato paste. Simmer on low heat for about 10 minutes. Makes about 1 1/2 cups.
