  • Day Three Menu - comments please

    I posted this on the "Review My Menu" area but got no response - any input would be appreciated.

    I'm on Day Three. How's this look?

    2 boiled eggs (at 6:00 because I'd been up two hours)

    B: 1 egg
    1/2 c cooked spinach
    2 oz (cooked) diced beef (pretty fatty cut, yum)
    3/4 c. sliced mushrooms
    1 oz sharp cheddar

    L: 6 oz salmon
    1 T mayo
    1/2 c. red peppers
    1/2 c. celery
    1/2 cup jicama

    - for cooking - 1 T. coconut oil.
    - it's only 11:30 and I've had 2 liters of water plus coffee (with a few drops of stevia) and some yerba mate (a "tea" from South America, very high in potassium & other good things, low in caffeine though it does have some). I will more than double that amount of water by the end of the day.
    I am a veggie-holic and I see I have used up all my veggies already - now what the heck do I do about dinner? My carbs are still pretty low. I have lots of great pork, beef & chicken ready to eat (cooked at home). But it's hard for me to conceive of a meal without veggies!

    * Update: For diner I wound up eating some of the yummy beef & pork (such a relief to buy the fattier cuts I've always craved!), with a half ounce of sharp cheddar on top.

    I am new to Atkins but have been between 30-40 g net carbs for more than a month so I'm not having any real cravings, although I am a cook by trade and enjoyed inventing low-carb treats with quality unsweetened chocolate or cocoa & stevia, and am missing that, as well as nuts & yogurt but I know they're not far away.

    Hi,

    I am just starting so I may not be much help..are we allowed to have red peppers on induction? I dont' see it on the list, so I am not sure...also are you getting the 3 cups of veggies off the salad list? You can eat more of these and there are veggies on the higher carb list that I think we are allowed one cup of everyday. Maybe if you don't find what you are looking for, you could send a pm to one of the moderators.....those meats sound so good that you are eating!! That is so cool that you are a chef!

      Hi Luv4,

      Pretty sure I got all my veggies. Yes, peppers are on the list. Actually I think most of what I ate is on the salad list, it's just that I cooked the peppers.

          Thanks, Grant, I intend to. I just walked across the street to our little convenience store and while I was standing at the till my eye was caught by some big bran muffins - I LOVE bran muffins, I would more likely gorge on those than any type of other junk, though they've carried them for years and it never occurred to me to buy one... but I was overcome with a wave of longing! I was quite surprised, since grains of any kind haven't been part of my diet for months. I guess it's probably because I can't even have any of my wonderful low carb creations during induction.

          Oh well, it's not for long and my motivation is strong.
