    Were you there when the doctor stated this? Your husbands diet is a rite of passage for early demise. Why would a doctor not try to help him with this issue? How old is hubby? I feel for your issue here Your DH and his diet regime is not the norm.
    My cousin was the same way...yes there are two of them! He was a marine and I say was because he was given a medical discharge. He collapsed during a training exercise and was found to have a cardiac condition. He was 6'2 and weighed 165 pounds soaking wet. His condition was contributed to his lack of a healthy diet. He lived on meat and potatoes only...not to mention McDonalds hamburgers. He was 24 years old and wanted to make a career out of being a marine. It was all he ever wanted to be. Currently he is 27 in school and eats vegetables. The marines went out the window. The psychological component that contributed to his pre-medical distaste of veggies has been overcome. Yes, reading between the lines, I am saying my cousin was not well balanced in the head when it came to food!
    The Atkins diet is a way of life that leads to eating naturally healthy foods. This aversion to green things and vegetables means DH is not going to be a candidate for Atkins. It doesnt mean you cant still join us. Maybe you will motivate him.

      Thanks I will just figure this one out on my own.. I was not kidding that he wont eat veggies. I cant force the man to eat them. I asked for ways to fix food that didn't include veggies so that we didn't eat the same thing over and over.

        Hi again, Michelle ... as the very wise Razzle said, just because your hubby doesn't want to get with the program doesn't mean you can't! And, she has a point ... once he sees you getting slimmer and healthier, he might think twice about the "NO VEGGIES!" rule

        We're not trying to bust your chops, hon ... but Atkins stresses the importance of healthful choices, and that means eating vegetables.

        P.S. I think your hubby's doc is a quack! Either that, or he just told you that's what the doc said so he wouldn't hear anymore about it from you! (Hey, I'm married, too!)

          No matter how thin I get he will never eat veggies.. Some people cant take the chemicals in veggies and some people have texture issues with food. His doctor told him he didnt need to eat veggies for vitamins if he took a daily vitamin and he could get the fiber in other ways. No I do not think he lied since I have NEVER bugged him about eating veggies. He asked his doctor because of constipation issues that he knows is from not eating enough fiber and that is when the doctor told him to get more fiber in other ways if he didnt like veggies. I personally love veggies and what veggies he does not eat I eat.

          I have been eating low carb most of my life as I knew it kept my sugar levels in check. I actually had to come off a low carb diet to prove to my doctor that I was in fact diabetic. When all he looked at was my a1c numbers.

            I'm sorry if you feel like I was bashing you. THere are a lot of induction recipes available that don't have veggies in them. However, as I said before, he is not doing induction or Atkins. You can check out sites like: Low Carb Luxury, Or Linda's Low Carb, I know there's another one but I forget it off the top of my head.

                First, congrats to all for working with the significant other's diet diversity and upholding yours.

                I thought about this problem.
                1) Please send me his veggies I will eat them.
                2) Lyssie has it right:

                No shirt
                No shoes
                No veggies
                No entry.

                Aha good he is eating flax seed and the other stuff. The husks are good.

                  There is no way I will get him to eat veggies. As I said he is a grown man in his 40's and he has done without them this long. I made a meat loaf tonight that had flax seed powder in it. We will be looking at ways to add the flax in more.

                      hahaha. I would like some meatloaf as well. Having been raised vegetarian, it's a food I really like but it kind of grosses me out to actually make.

                          Meat loaf had 23 carbs total by fitday when I inputed all the ingredients. I didnt minus the fiber so it will be less carbs than that. I use the 73%-80% hamburger meat because lean meat on the meat loaf is tougher to eat. He didnt even know it had the flax in it. I couldn't tell either.

                          Here is what I did.

                          3.4 lbs of hamburger 0 carbs
                          herbs and spices 0 carbs ( garlic powder, onion powder, Italian seasonings, salt and pepper)
                          6 tbsp low carb ketchup 6 carbs
                          4 tbsp flax seed powder 8 carbs 8 fiber
                          2 eggs 1.2 carbs
                          2.5 cups shredded cheese
                          4tbsp Worcestershire sauce 4 carbs

                          Put hamburger in large bowl, mix in spices and herbs, 4 tbsp low carb ketchup, 4 tbsp flax powder, 2eggs, 4tbsp of worcestershire sauce.

                          Lay out long peice of wax paper/foil and dump the mixture on it. Flatten out into a long square about 1/2 - 3/4 inch thick. Once flatten sprinkle 2 cups of shredded cheese evenly over the meat. ( note: you can stuff other ingredients inside at this time, I have used olives, onions, pepperoni, mushrooms ) After cheese is on fold one end over, then fold over again or you can roll it like you would a jelly roll. Tuck in the ends to seal bake at 400 degrees until done. Usually 35-45 mins. 5 mins before taking out top with 2 tbsp of low carb ketchup and 1/2 cup of shredded cheese.

                          This can be made up ahead of time and frozen. It actually keeps more of the cheese inside when done that way as it cooks from the outside in.

                          Enjoy

                          Note: this is my usual meatloaf I just tweaked it for atkins. I usually add A1 sauce, can speg sauce instead of the low carb ketchup and more Worcestershire sauce but this turned out just as good.

                            You know I was thinking about you the other day and this book came to mind...I don't know if you ever heard of it "Deceptively Delicious" by Jessica Seinfeld. Well it's a bunch of recipes with veggies hidden in them...I have had a few of these recipes from a friend of mine who's kids wouldn't touch veggies with a 10 foot pole...lol Well, if she hadn't told me I wouldn't have known any difference!! I'm sure you could turn a lot of these recipes into low carb friendly ones...

                            She uses fresh veggies in her recipes and makes a puree out of them, so there is no texture to the veggies when you eat them.

                            I just added a recipe from her site as an example, and tweaked it a little to make it low carb by replacing the bread crumbs with powdered parmesan cheese. I have coated chicken like this and it works good to fry up!

                            Chicken Nuggets
                            Ingredients:


                            Serves 4

                            • 1 cup parmesan cheese
                            • 1/2 cup flaxseed meal
                            • 1/2 teaspoon paprika
                            • 1/2 teaspoon garlic powder
                            • 1/2 teaspoon onion powder
                            • 1 cup broccoli or spinach or beet puree
                            • 1 large egg , lightly beaten
                            • 1 pound boneless skinless chicken breasts or chicken tenders , rinsed, dried and cut into small chunks
                            • 1/2 teaspoon salt
                            • Nonstick cooking spray
                            • 1 tablespoon olive oil

                            In a bowl, combine the parmesan, flaxseed meal, paprika, garlic and onion powder on the paper or foil and mix well with your fingers.

                            In a shallow bowl, mix the vegetable puree and egg with a fork and set the bowl next to the breadcrumb mixture.

                            Sprinkle the chicken chunks with the salt. Dip the chunks into the egg mixture and then toss them in the 'breadcrumbs' until completely coated.

                            Coat a large nonstick skillet with cooking spray and set over medium-high heat. When the skillet is hot, add the oil. Place the chicken nuggets in the skillet in a single layer, being careful not to crowd the pan, and cook until crisp and golden on one side, 3 to 4 minutes. Then turn and cook until the chicken is cooked through, golden brown and crisp all over, 4 to 5 minutes longer. (Cut through a piece to check that it's cooked through.) Serve warm.

                                Yes, the stuffed meatloaf is very good. I am cooking cabbage fried in bacon drippings as we speak. I love fried cabbage!!
