    I just added a recipe from her site as an example, and tweaked it a little to make it low carb by replacing the bread crumbs with powdered parmesan cheese. I have coated chicken like this and it works good to fry up!

    Chicken Nuggets
    Ingredients:


    Serves 4

    • 1 cup parmesan cheese
    • 1/2 cup flaxseed meal
    • 1/2 teaspoon paprika
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 1 cup broccoli or spinach or beet puree
    • 1 large egg , lightly beaten
    • 1 pound boneless skinless chicken breasts or chicken tenders , rinsed, dried and cut into small chunks
    • 1/2 teaspoon salt
    • Nonstick cooking spray
    • 1 tablespoon olive oil

    In a bowl, combine the parmesan, flaxseed meal, paprika, garlic and onion powder on the paper or foil and mix well with your fingers.

    In a shallow bowl, mix the vegetable puree and egg with a fork and set the bowl next to the breadcrumb mixture.

    Sprinkle the chicken chunks with the salt. Dip the chunks into the egg mixture and then toss them in the 'breadcrumbs' until completely coated.

    Coat a large nonstick skillet with cooking spray and set over medium-high heat. When the skillet is hot, add the oil. Place the chicken nuggets in the skillet in a single layer, being careful not to crowd the pan, and cook until crisp and golden on one side, 3 to 4 minutes. Then turn and cook until the chicken is cooked through, golden brown and crisp all over, 4 to 5 minutes longer. (Cut through a piece to check that it's cooked through.) Serve warm.

    I am fixing pork chops tonight wonder if this will work with pork chops? He likes the shake and bake onse alot but no so much the plain pork chops. Any ideas?

      Re: Pork chops. I braise mine in a heavy skillet with chicken broth, poultry seasoning and chopped onion. Brown 'em up, pour in enough broth so the chops are sitting in a nice bath of it, and put the lid on (turning every half hour or so). You'll know they're almost done when they start soaking up the broth! Then I get some canned gravy to serve over my husband's ... I just stick with pan juices for myself. It takes about 2 hours to get thick chops nice and tender, but they taste great! And my husband LOVES "the other white meat"

        What is the carb count of this? I know onions add some carbs. I am really trying to count how many I have while on induction. Also all the broth I looked at the store had carbs in it.

            Yes, i fixed bacon this morning. i also add uncooked bacon to the pot with salt and pepper. it all cooks down and the uncooked bacon is cooked and taste great.

            head of cabbage
            bacon dripping from one pack of bacon
            salt and pepper to taste
            few slices of un cooked bacon

            cook on med heat, add all to a large stock pot, stir often, cook until tender and all water is cooked off (steam). Cabbage has alot of water so do not addany to the pot. Also no lid on the pot while cooking.

                  THIS WAS GREAT!! I chickened out and didnt use the veggie part but I used the rest and added pepper to the mixture. I used this on pork chops and it tasted wonderful. Hubby said he would do this again in a heart beat. I will be trying this to make chicken tomorrow night. I may stuff some chicken breast and make chicken cordon blue with the coating mixture.

                  NOTE: I did 6 pork chops and had enough left over for 2-3 more pork chops. I poured a little out at a time in a shallow bowl and only added more when I needed it so I wouldn't get egg in the entire bag making it not usable again.

                    LOL...Girl, the whole point of that recipe was to sneak veggies in there for your husband!! haha

                      I honestly dont think I can sneak veggies in his food. If we go out to a restaurant and orders something plain and they bring it with all the veggies he sends it back and when they bring it back he can tell if they made a new plate or just took off the veggies.

                        I can tell that as well though - like if I ask for a change of veggies and they bring the wrong ones, I ask for the right ones.

                          OMG.... I totally figured out a way to get him to eat at least one veggie..

                          LOW CARB PUMPKIN PIE

                          IT IS THE ONLY VEGGIE THAT HE EATS AND IT HAS TO BE IN PIE FORM!

                          I would fix it weekly if he would eat it.. lol
