  • No More Cornbread!!!

    I am a true southern belle who enjoys her cornbread, peach cobbler, sweet potato pies, ham-ok enough!-I am getting hungry. Anyway, my husband and I started atkins on yesterday and we are determined to change our lifestyle. We are a professional couple, and we are used to eating on the run and enjoying great dinner parties and sinful restaurants. Thank you in advance for your support and your suggestions.

    I hear ya on the down home cookin'! I'm a southern gal, too! Okay, so I live in Kentucky and that makes me more hillbilly than belle, but I digress.

    I don't go to fancy restaraunts or dinner parties, but I do have to suffer through family gatherings and church dinners. And being from the South, you know the dinners I'm talking about!

    I'm here to tell you that it can be done. Bless your heart, you'll soon be eating low carb cornbread!

      YOU can do it! My DH and I started living a Low-Carb lifestyle five years ago and have never looked back. Neither one of us has been able to lose ALL the weight we'd like, but the difference is still amazing. There are actually people who don't recognize my DH still. I figure we're all going to get old someday, but I'm determined not to be old AND SICK! I've been studying low-carbing and am totally convinced that this is the way to be healthy for the rest of my life.

      Check out Linda Sue's recipe page here: Linda's Low Carb Menus & Recipes - Home. There are a ton of great things to eat on this WOE. You'll build up a supply of recipes that you love and it'll get easier.

      Also, PLAN, PLAN, PLAN. Try to get any junk out of your house and keep plenty of good things to eat in the fridge. Boiled or deviled eggs make a good snack. I try to keep leftovers of things my DH especially likes to snack on, such as crustless quiche, in the fridge.

      Concentrate not on what you CAN'T eat, but on all the wonderful foods you CAN eat and you'll do well. I'm wishing you success!

        Thanks for the encouragement. I have started to plan our meals and actually its quite easy. We are trying to decrease the eating out and parties because it tends to be so expensive. My family is from the Midwest and they say I am "country-- like Minnie Pearl" but I say we are Southern- and that's a big difference. I have family in Paducah and Grain Chain Ill, right across the Mississippi, I love going to our hometown. I still feel like I am in the south. So what if I like the occasional moonpie and coca-cola.
        I have one question- Is anyone else dreaming about carbs? My husband dreamt he was eating a bag of sourballs and in my dream, I was having all out feast - but I don't remember the rest. lol

          I'm not southern, but I sure get that way when it comes to Southern food. And talking to southern people, I develop a drawl. Dont know where that comes from, but maybe I AM southern LoL

          The dreams are totally normal. Mine would be so real I would have to pee on a ketostik when I woke up, then rummage through all the trashes just to make sure I didnt eat that large pizza, box of cake, carton of ice cream.. etc. Most people around here have come to like those kinds of dreams cause we can binge without being thrown out of ketosis!!!
