    Hi All-

    I just joined today. I don't have a lot of weight to lose but I was previously a "low fat" girl and have been going up and down with my weight for years and usually feeling hungry. One of my friends suggested that I try low carb.

    I didn't want to do a low carb diet because I love pasta, rice, muffin, bread, cereal, etc. I've been doing research with different recipes .. I am on day 7 of induction, down 5.4 pounds and loving my MIM (muffin in a minute) and my cauliflower mashed potatoes and rice!! I am looking forward to coconut muffins on OWL next week-- If I get to my half way point , that is. Woo woo!! I'm psyched and think this is something I can definitely adapt to long term..

    Hmm, I'm just curious, did you happen to read the book? There is a lot of good information in it to help you do this wol successfully. I hope you are eating some protein and fat...

      Welcome to the board!

      I'm afraid I'll have to rain on the parade, sorry... After induction, you should be introducing new foods in a specific order. First, you introduce vegetables -- a new veggie each week. Then you introduce diary -- a new diary product each week. Then only come nuts (i.e. also coconut). So you'll have to wait for at least 3 more weeks for coconut muffins.

      5.4 lbs in the first week is great! As MommaRuthie said, read the book... or at least go through the sticky threads on this board.

        Hi - No, I haven't read the book. I just used the online information. I am eating protein and fat in moderation (not the fat so much).. the MIM has 18g of fat and 12 g of protein-alot of fiber too hence low net carbs. Only 1.5 net carbs- that is better than 2 eggs and a nice change of pace..

        Muffin in a Minute (suitable for Induction)

        Serving Size: 1

        1/4 cup flax meal
        1/2 teaspoon baking powder
        1 packet splenda packet
        1 teaspoon cinnamon
        1 large egg
        1 teaspoon butter

        Put the dry ingredients in a coffee mug. Or a bowl for a different shape.

        Stir.

        Then add the egg and the butter. Mix.

        Microwave 1 minute (or more). Take out. slice, butter, eat. Set mug to soak immediately.

        Cream cheese would go nicely, too.

        Notes: 1.5 net carbs.

        Per serving: 235 Calories; 18g Fat (63% calories from fat); 12g Protein; 11g Carbohydrate; 9.5 g. fiber; 223mg Cholesterol; 284mg Sodium

          Thanks Georgiana-- I'm also on the Atkins website community board and they have been helpful. I'll pick it up! I need all the help I can get!

            Gypsy Lady, you should read a few stickies... Atkins is a high-fat diet.
