I started atkins about a month ago, I lasted two weeks which was hard because my family goes heavy on carbs. I'm the chef of the house so I'm expected to make potatoes, breads, pasta, sandwiches, etc. daily. I was good though, there were a LOT of leftovers those weeks. I caved when I went to my aunts for easter dinner because I knew she would get offended if I ate nothing but her turkey. So I enjoyed the meal with the healthier parts in bigger portions and saved myself the family feud.

Now I'm on day 3 after restarting the program, I know all my info, just been looking up neat recipes to replace some of those old snacks. THis time around I'm in it for the long haul, I already lost 30lb., so I'm halfway there. I also have been sticking to a weight lifting routine, because before I had been discouraged because fat was hiding any results from weight training. But now I'm definetly making improvements which is great.

My advice to anyone training on the diet to lose fat:
Train at a level you can handle without straining yourself for any gains in the first 2 weeks. After that you can up the intensity as your carb allowance goes up. Also I recommend running a bit as a warmup, it works great.

Anyway glad to be here and hope I can help people as much as they've helped me.

Since you are the chef, you are in a position of power. They don't need to be eating all those unhealthy carbs, either.

I am from a family of skinny people, but I am the cook in the family. I've learned to make potato dishes with turnips or cauliflower that said family never knows the difference. They all but licked the bowl on my faux tater salad made with cooked turnips.

When my extra skinny sister was here for a week, I made her mac & cheese and made me some "Just Like Twice Baked Potato" which tastes very like any mac & cheese or Au gratin potatoes, but is made with cauliflower. Sis asked for a taste, then proceeded to eat most of my low carb dish. She asked for the recipe and she hates to cook! She taste tested most of my dishes and loved them all.

I am in the middle of writing a low carb cookbook and none of my taste testers are doing low carb or any kind of a diet. They have loved it all. Some of the taste testers had no idea they were eating low carb/Atkins food. They just thought it was really good party food.

Breads are the hardest to reproduce into low carb, but I am working on some recipes. I am allergic to all grains (found out after starting Atkins) so my recipes are all made with nut flours and flax, which are heavy.
People who say it can't be done, should not interrupt those doing it.

It took a lot of trial and error, but I finally came up with a pizza crust that my teenage grandson cannot tell is low carb and contains no grains. It looks just like one of those Boboli pre-baked pizza crusts. I make my pizza sauce, so no sugar. The rest is Atkins friendly. The true test is when non-low carbers like it--a lot.
