    I lost 30 lbs on Atkins about 5 years ago. But that was when I was living at home and my mom was cooking for my dad who was on Atkins too. I've tried again over the years and keep failing because I don't cook!
    So it's time to cook because I've made myself sick on hotdogs and eggs!
    My biggest problem now when I try to do Atkins again is having to force myself to eat all these rich foods that I got SO sick of doing Atkins on a off for 3 years after I initially lost the 30 lbs. Looks like I have to start getting creative in the kitchen! (I seriously want to throw up after a few bites of eggs!)

    Also, I was diagnosed with hypothyroidism 18 months ago. Even though I'm on synthetic hormones, it's still so much harder to lose weight! sad =(
    But I've been hopelessly chubby my whole life so I'm used to it...
    I've read that low-carb is good for hypothryoid peeps but I haven't tried Atkins again since I was diagnosed so we'll see!

    Anyway, trying to lose a few before the official wedding on reception (5/23) for my sister's wedding. She got married in the Bahamas on April 4th - here's a LOVELY picture from the reception that inspired re-attempting Atkins! (god, nice back fat! i didn't even realize it was that bad!!)


    Then I plan to lose as much as possible for summer. Nothing sucks more than being 210 lbs when it's 100 degrees out!!!

      With Atkins the cooking can be minimal. I do lots of salads where I zap some veggies to half cook them in the microwave (like green beans, broccoli, asparagus, etc.) and then toss them into salads with artichoke hearts, tomatoes, boiled egg, cheese, tomatoes, etc.

      I also do raw veggies with blue cheese or ranch dressing "dip" as an easy no cook veggie addition.

      Simple meats-- simply roast beef or chicken in the oven and then save them for use during the week. Top with salsa and cheese or pesto mayonnaise or lemon/herb butter for a quick change of taste.

      Desserts? My favorite is simply cream cheese and ricotta mixed with a dash of vanilla, lemon juice and Splenda--cheesecake in a cup.

        Welcome to the board, msm!

        There are so many wonderful foods you can eat on this diet plan that you shouldn't have much trouble finding some great dishes that are easy to make. It is so much more than hot dogs and egg!. There are a million ways to get creative with veggies and other foods like chicken and tuna. Do you like stir-fry? It's easy and you can throw lots of things into it. Don't give up because with a little effort you will find that this is the only way to go.

        There are also a number of people on the board with hypothyroidism and they would be happy to talk to you about their experiences.
