  • Hi! My name is Juls

    Hi! My name is Juls and I am new to Atkins. Today is day #4! I have eaten a lot of eggs and really need to find something new for breakfast! I recently started Atkins because I found out I have pre-diabetes. I am a teacher and have the summer to focus on my health, and my goal is to be in control of my food habits by August-in order to continue losing the weight when school starts back. There is so much sugar at school! Cupcakes show up every other day, candy, potlucks, and chocolate handed out for stress on a daily basis! I really want to learn how to say "no!"

    Hey Juls, nice to meet you. A school teacher huh, pretty stressful I would think but rewarding as well. Look around the boards and you will find some really good recipes also there is Linda's Low Carb Linda's Low Carb Menus & Recipes - Recipes maybe you can find something there. Have a good summer and good luck with your weightloss and curbing your sugar cravings!!!!!!!!!!

    Well its been over a year now and I am currently on maintenance and still trying to adjust to the "new" ME. No major struggles to report, just livin' day to day.

      Welcome to the board, Juls!

      There are lots of ways to make eggs to keep them from getting boring. My favorite is to add pepperoni and mozzarella cheese for a pizza omelet. But you can also eat other things for breakfast like lunch meat, or leftovers from dinner or any number of other things. Check out the Food and Recipes forum for more ideas.

        When I get sick of eggs, I make a flax muffin. I beat one egg, 3 T flaxseed meal, 1/2 tsp baking powder and then, either dehydrated onion and dill OR cinnamon and Splenda and a tablespoon of melted butter all together in a bowl. Microwave the bowl and all for about 90 seconds. Flop it out onto a cooling rack for a minute to cool.

        Add cream cheese or sugar free maple syrup to the sweet version for breakfast

        or ham/bacon and cheese to the savory one for a savory breakfast. It's a little buttery but almost like a bread and that is the perfect change from eggs for me when I need it.

          When I get tired of eggs (which is very rarely) I eat leftovers from the night before or I will make something new -- have you tried the revolution rolls? You can put together quite the sandwich with them. Or you can add a little Splenda when making them (to make them sweeter) and get some daVinci sugar free syrup and make a version of french toast. Some people drink the egg nog shake in the morning and love it (I was never an egg nog person so it didn't appeal to me).

          Flax use is limited so make sure you aren't using too much per day and also make sure you are drinking enough pure water daily so you don't become constipated. Making sure you drink enough water (64 oz MINIMUM) will also help keep your internal organs working properly.

          There is nothing on the acceptable food list that is off limits for breakfast - it is a personal thing what you eat. If you prefer salad and a piece of meat go for it!
