  • OK, since Tom asked nicely....

    I hate introductions, I like to just jump into things and get moving! But Tom sent me a PM and asked nicely, so here I am.

    Hi Tom!!

    Anyway, I tried atkins a couple times before and couldn't get past the first few days without caving in. This time I'm serious about it.

    I was a size 3 @ 136 lbs when I got pregnant with my daughter. I was 172 when I gave birth. I haven't been under 160 since. I hit 202 in Dec 06 and then dropped about 30 lbs a few months later due to stress from a break-up. It only took about 4 months to put it all back on. I've been in the 196-202 range for the last year and I'm sick of it.

    Almost 2 weeks ago I started induction. The only time I caved was on day 3 (memorial day) at a bbq when I had a few bites of macaroni salad and two small pieces of garlic bread. I then promised myself I wouldn't cave again. And I haven't. Last Friday night I experienced what I think was the "induction flu"..massive headache and sick to my stomach. I had a couple crackers, took some advil and went to bed. Felt a little better on Sat, and then was feeling great on Sunday. I haven't looked back since.

    I've been lurking quite a bit trying to figure out how I can learn to love veggies. I'm not quite there, but I'm getting there. I have to say that I have found my favorite veggie because of this site - jicama. That stuff is awesome!! I finally bought some last night, came home & fried it up. OMG it's the best! Grated it with my cheese grater and made shoestrings and then thin slices like chips. Sprinkled some garlic powder & a little salt - to die for. I'm hungry now just thinking about it!

    Now if I could only find a couple others that I love just as much.

    The support here amazes me. I hope to join in on more conversations in the near future and hope that I can count on you to keep me on my toes.

    Hi there and welcome! I'm glad Tom persuaded you to post here and tell us about yourself.

    Congrats on your ten pounds loss. That's great!
    As for the veggies... they grow on you! After a few months of Atkins, if you try lots of different types, I'm sure you'll suddenly find that you actually crave them. I envy you the jicama. Where I am it's impossible to get and I'd so love to try it!

    Post lots, make friends and use the board for all it offers. We're all in this together!

      hi and welcome Silly --

      check out the recipe links for great veggie recipes. I love fried radishes - they look and taste like fried red skinned potatoes with onions. I don't add the garlic like it said because it took away from the taste of the radishes and I like that taste. You can do many things to make cauliflower taste wonderful -- last night I had "loaded cauliflower" which tastes just like a loaded baked potato. There is also a recipe for "potato" salad using cauliflower that is great also. I make cole slaw using shredded cabbage with a homemade sauce using a little cream, pepper & Splenda - the only thing I don't use is carrots (which are high on the Rungs). Also try chayote - it you cut it and fry it in butter and cinnamon it tastes like fried apples - yummie!!

      You will learn to love the vegetables - I use to put green beans or corn or peas on the table -- 1 thing at a time....now I have 2 or 3 veggies at each meal and love them! Try them all to see which veggies you like. Try using fresh or frozen over canned -- and if you use canned drain the brine off of the veggie ad rinse it to get the salt off of them and cook them in butter or bacon grease (to get more fats in your daily intake).

          If at first you aren't a big fan of veggies, save your daily cheese allowance and top them with it. You will get used to the veggies and the cheese makes it palatable until you start to develop a taste for them. I love pureed cauliflower with a wee bit of cream and onion and a good stir in of cheddar. Mmmm. Also try grilling things like red peppers, eggplant, zucchini on the grill with a little olive oil. The grill gives them a different taste.

            Thanks for all the great suggestions guys! I dropped another 2 pounds, but I'm loving the fact that I can see the inches dropping too!

            I'm just getting into the whole cooking on a daily basis thing. I was so into convenience foods thing it was not even funny! It's taken some getting used to because now I have to plan to cook so that I'm not starving and then having to wait half an hour till food is ready. Bought some cauliflower last night, going to try a couple things with it tonight. Wish me luck! And thanks for all the encouragement!

              I sometimes make my salad and eat it before I start cooking so I am not starving when I sit down to dinner or get tempted to snack on things I shouldn't have while cooking for the family. That helps fill me up so I eat less for dinner too.
