    Almost typed 1/4/09...... Still trying to transition into the new year!

    Just wanted to introduce myself, going to start Induction on Monday.....my only experience with Atkins was back in 2002, I started Induction and got really sick on the 2nd day (wasn't related to the diet, but as crappy as I felt it was an easy out.) I was in college at the time, not active at all and continued eating junk. I ballooned to about 415 lbs. when I graduated in 2005. Since then I curbed what I ate, cut out sugary sodas and began drinking lots of water and started dropping weight.

    Fast forward to this year, when I was diagnosed with type 2 diabetes....I had managed to drop to about 305 lbs. at that time, but it was too little too late. I'm sure a combination of eating junk for years, genetics (type 2 on both sides of the family) and lack of exercise got me to this point. My wife has supported me through it all and I am very thankful to have her in my life...we've been married for 5.5 years and dated 4 years prior to that, so she's been with my at my heaviest and through the diabetes diagnosis.

    We had our first child, our daughter Sara Carter this past July. She has daddy wrapped around her finger, I didn't realize how quickly and deeply I'd fall in love with her, but she is MY baby girl.

    Atkins just seems to make sense now that I've gone back and read up on it. Especially with helping control blood sugar. RIght now I'm only taking oral medication, which I want to get off of if possible....definitely don't want to become insulin dependent.

    So for myself, and my family, I'm starting on Monday. I have a feeling the first few days will be rough as I get used to induction. I'm looking forward to sharing my journey with fellow Atkins followers. I hope everyone has a happy and successful 2010! Here's to our health!

    Along with Dr. Atkins New Diet Revolution (2002), you might want to read Dr. Atkins Diabetes Revolution.

      Welcome to our board. We have some very successful members who have stabilized their bloodsugar and gotten off diabetes meds. So you should be able to find some inspiration here. Do have a look at the diabetes forum.
      Remember to follow the rules. That is when the diet works.

            Hi -- you can do this. I started last January with an A1C of 10.5 -- my last A1C (just a month ago) I'm down to right around 5.0 -- my blood sugars have changed drastically and I rarely am over 110 now. My meds have been changed since I started but I have some other issues that are keeping me on Metformin for awhile longer.

            Plan your meals for a fews days so you have everything in your home and you won’t be tempted to eat something not allowed. Drink a minimum 64 ounces of pure water (nothing added), exercise and take a non-iron multivitamin daily. Look at the challenges to see if there is anything that interests you - start a journal, it's a great place to get everything out in the open, be accountable to yourself - you'll also meet some great people there! http://www.atkinsdietbulletinboard.c...journal-chats/.                 Lol, a bit of a rough start tonight to get prepped for tomorrow. I had 4 lbs of burgers, 3 new york strips and 3 chicken breasts on the grill. I went inside to take my dozen boiling eggs off the stove to cool. When i went back outside, all of my half cooked meat was no longer sizzling very loudly....ran out of propane!

                I broiled the burgers, the steaks were done enough.....the chicken I tried to finish in the microwave....but they were still looking pink after a while....... I just gave some to our dog and tossed the rest.....I have a 3lb bag in the fridge to cook tomorrow so I wasn't too upset!

                Got everything done, have my lunch and snacks packed to take to my work fridge tomorrow and have plenty of burgers, steak and boiled eggs for the week. Looking forward to getting started tomorrow!

                  It's great that your meat and eggs are prepped- do you have your veggies prepped, too?

                    Well my strategy for lunches this week is to make salads each evening. I was thinking about making them all for the week but figured they might be better if I pull lettuce directly from the head the night before....by Friday they might be a little wilted if I separate leaves from the head too early. I also cut up some green onion to top off my salad and made some dressing out of garlic vinegar and EVOO. Going to top it with some chopped egg.

                    That's my plan the first few days as I figure out what else I can do and expand on my veggie recipes. I currently have lettuce, cabbage, celery, cauliflower, green onions and white onion int he fridge to eat. I'll probably saute cabbage and onions in butter one evening and eat leftovers a couple of days. Also need to see about whipping up some creamed cauliflower.

                    That's my plan so far. I'm also reading up on veggie recipes as honestly I haven't been a big veggie eater in the past, more of a bread, meat and potatoes diet......So this is pretty cool to me learning what I can do with all of these new foods.

                      You do realize you can cook foods in oil -- not everything has to be broiled, baked or grilled. I make "fried" chicken about once a week and enjoy it since we can have the skin on top and it doesn't get dried out.                       Make sure your getting enough veggies in your daily meal plan -- 2 cups of veggies from the first part of the list and 1 cup daily from the 2nd part of the list. http://www.atkinsdietbulletinboard.c...on Induction?)

                        Yes, I will be putting the Fry Daddy to good use! We fried Turkey tenders in it a week ago. I need to drain the used oil out..... I still have plenty of unused peanut oil to put to use!

                        I have two cups of lettuce for my salad, with maybe 1/8 cup of green onion on top.

                        I started using Fitday.com..... and just found out eggs have carbs!...1.6 grams per jumbo egg?!?! Dang it, I already ate 3 today!

                          What FitDay entry did you use?

                          It's best to use "egg, whole, raw" and enter separately the other ingredients you use in cooking.

                            I feel your pain on wasted food! When I first started, I had alot of food laying on my counter waiting to prepare. I only left my kitchen for a couple minutes and my dogs went to town on all the meat. Im in the military, so I have to cook 3 days worth of meals at a time. I have a good system that works for me right now. I use cookie sheets and drying racks. I put a drying rack (think that's what their called. It's like a piece of wire mesh that allows grease to drain onto the cookie sheet.) inside my cookie sheet and bake my burgers, fish, chicken, pork chops and bacon all in one shot. It really helps out with time and allows you to have food that is free of the bad fats. I also make 2 packages of bacon at one time as well and just keep it in the fridge. That makes breakfast faster to cook since eggs don't take long.

                              Ah, that's what it was, thanks georgiana! I added them as "Egg omelet or scrambled egg" since I scrambled them....made a big difference, thank you!


                              livin, that's my plan to keep lots of cooked meats and eggs ready and available. I need ot read up on some recipes to try out different things, but having meat ready to eat on hand will help me out big time.

                              And our dog is a miniature schnauzer, so as long as I keep things up on the counter he has a really tough time getting to it!
