Hi, I'm Amaranth. I'm a woman in my late thirties, dealing with some health problems, among which fibromyalgia. I have done Atkins before but I seem to be missing willpower at times and fall of the wagon and clamber back on. I'm finding though that this way of eating really helps my pain levels, so I hope that will help me stick to it this time.
I have restarted as a new year's resolution and am doing all right with it again. I was in ketosis before I knew it. Hubby can tell by my breath
This evening I had some free time while waiting for the canning of my low carb chili that I made in jars, so I found this site and signed up. Canning meals for the way of eating is really helpful to me, because I don't always have energy or time to cook and you can only eat a few bit of cheese and hard boiled eggs only go so far
That way you can open a jar and have some wonderful chili or other recipes that are wonderful. I've also experimented with canning little meatballs in cabbage leaves in a stevia sweet and sour sauce. My husband loves it and he's not on Atkins, so I guess that worked out.
I love experimenting with recipes and food ideas, and am looking forward to finding more on this board. And I'm looking forward to the warmer months that will come (though it takes some time yet) and doing a bit of exercise will be easier on me and the local hot tub will be open. That will really help me, right now I'm kind of stuck trying to exercise with the WII and with fibro it's difficult. warm water helps so much to move and exercise.
