To answer your husbands question, what does he do now when his blood sugar reading is too low? He adjusts the amount of insulin he takes correct? He will do the same thing when he's on Atkins. I am Type 2 (and post on the diabetic forum) - my A1C started at 10.3 and is now 5.3 with Atkins. I take metformin twice a day - and have had it adjusted since I started because I was taking a mix of glyberide/metformin twice a day.
When I exercise and get a little lightheaded I make sure to eat a string cheese or get some veggies in me - a hard boiled egg is good also, slice of ham with cream cheese will help with shakiness also.
He can ask me any questions he has and I'll do everything I can to help him and you also.
Make a variety of different meals - check Linda's site and make 3 or 4 meals ahead to freeze or keep in the refrigerator. Linda's Low Carb Menus & Recipes - Daily Menus there are great dishes to try here.
Make sure you're drinking a minimum of 64 ounces pure water daily -- this will also help your husband keep his sugar levels more even - I started drinking 128 ounces of water the day I started Atkins (that's from drinking 0 ounces of water the day before).....
