      Count up the net carbs in that ... you're not getting "MOST" of your net carbs from Induction vegetables.

      Cut back on the lettuce and add some of the carb-denser vegetables ... try to get MOST of your daily net carbs (and as close to 20 net carbs as possible) from Induction vegetables.

      Undereating in carbs isn't going to help you in the long run.

          Outside the box thinking! Duh... I should've thought of that. I just went with "1 cup serving = 1 cup is what I use"...

          I keep seeing Jicama... is that something I can find at the local grocers?

            I buy my Jicama at my Super Walmart, and local grocers, and Mexican markets. Do not store the unpeeled jicama in a plastic bag, it will mold quickly.

            Where do you live?

            I not only like it raw, plain, or with fresh lime and a bit of salt, but I also like it fried.

            I peel it, then slice it first into large thin flat pieces, and then lay the slices on a paper towel for a minute or two to remove the excess moisture so they will fry up ok. Then I slice them into thin strips and fry them in some butter and peanut oil, and when they are almost "burned", I turn off the heat, I pour through a strainer to remove the excess oil, and then sprinkle some cinnamon on them and give them a toss. Oh so Yummy! I soak up the extra moisture before cooking with the Paper towels, otherwise it seems they never get fried up enough.

              I could only find Jicama at Whole Foods and the internet has so many different carb counts for Jicama that I am scared to eat it.......Its good though!

                I use fitday.com to keep track of my food/carb intake. And do not be afraid of the carb count, it has a high fiber count as well, so you need to look at the net carbs. It also is good to have when you had a day that you are low on your carb count.
