I think undereating in carbs isn't doing "pretty good". Dr. Atkins didn't intend for us to undereat. 20 net carbs is nutritionally sound and gets us in to ketosis. If you're not eating enough net carbs, then you're short-changing yourself.
As to the leg cramps, you might try eating 1/2 an avocado.
Or having some broth ... the salt might help.
