    So, I haven't been here since November 2008. Wow, can't believe it has been that long. I fell off the wagon back then and just when I was going to recommit, I found out I was pregnant. Flash forward...had the baby in February and finally we are getting settled into a routine. I also put on a lot of weight and right now I am weighing in at 235. *sigh*

    I am ready to start again but I don't want to fail like I did the other times I did Atkins. I need big time help.

    I'm sure people don't remember, but I'm a veggie hater...a huge downside when you try to do Atkins!!!! I like all the "bad" ones like potato, corn, green peas and hate most of the ones I can eat, aside from lettuce

    I am a challenge on this WOE but I'm looking for someone who is interested in donating some time to me to get me on the right path. You would be a big part of saving my life and boosting my self esteem and I would be forever grateful. Anyone up for the challenge?

      Welcome back!

      What vegetables have you tried until now? How did you cook them?

      Did you try mostly fresh/frozen vegetables? Or canned?

        For veggies, I really like to add finely chopped broccoli and onions (you could also do tomatoes, mushrooms, bell peppers) to my scrambled eggs or omelets. Thinly sliced and rinsed leeks pan-sauteed with a little garlic and lemon juice...you can do the same thing to asparagus. Chopped and boiled turnips will mash up just like potatoes, with just a slightly peppery, horseradish-y flavor, and are great with added cream cheese. Petite brussels sprouts (freezer section) sauteed with chopped bacon or prosciutto and garlic. Jicama sliced thinly with just a sprinkling of lemon juice and cinnamon...I could go on and on! I did not used to love veggies either, but I adore them now

          Welcome, and congrats on the new baby! I'm in the same boat not a huge veggie fan. But after reading Stephanie's reply I am going to try some of those! yum yum

            I've tried all kinds of the standard veggies...although haven't tried asparagus. I have tried fresh, frozen and canned...I am not much of a cook so I would just boil or steam them.

            I don't mind broccoli and cauliflower raw, hate them cooked. I have looked all over the city and not a jicama to be found. I don't know anyone who even knows what that veggie is! I do like cabbage and turnip.

            Looking for help with ideas on what I can eat when I get tired of salad! LOL

              Try roasting some vegetables. It gives them a nice flavor.

              Also take a look at Linda's recipes. Many ideas there.
