  • Individual Flax Seed Pizza

    I didn't feel like cooking tonight, so thought of Kerianne's flax seed bun.

    I made one, put pizza toppings on it and put it in the toaster oven to melt the cheese.

    This would also make a good grilled cheese.

      LOL anything with pepperoni on it has to be good. I made my pizza on a portobello mushroom. Oh yummm

        Kelly, the flax seed crust tasted a bit like dark brown bread... not exactly the perfect base for pizza, but it was acceptable. I think the next time I make it, I will mix some oregano and seasonings into the crust.

        It would be much better with melted cheddar, I think.

        Lynne, the portobello pizza sounds GOOD! I hadn't thought of that.

          I tried one of the muffins, too, but I made a egg mcmuffin out of mine. I was wondering if toasting/broiling it made the bread anymore crispy or crunchy. Mine was spongy but I really liked it.

          Someone in that original thread suggested making two muffins out of the recipe instead of one to make it friendly before Rung 3. I think that's a great idea for the egg mcmuffin.

          BTW, is this a private forum?

              Kelly, mine was a little spongy, but putting it in the toaster oven helped a bit.

              I think in the future I might use 1/2 egg because it did taste a little eggy. Maybe 1/2 egg and 1 T cream?

              I think anyone who wants to join in is welcome here. It was set up so those of us who have stalled could support each other and get us over being stuck. We really need more people to keep the forum alive and interesting.

              DBHAC, we make our own flax seed cookies, crackers and muffins from ground flax seeds. A lot of stores have them in the health food section. They take only a few minutes to whip up and microwave.

              I like the golden flax seeds better as they are lighter in color. Regular flax seeds are dark brown.

                    Hellmart, I mean Walmart has the flax meal as well. It's in the section with the flour and baking goods.

                        Here's Kerianne's original post.

                        I make a FABULOUS flax seed "bread"/"hamburger bun" by taking 2 tbsp ground flax seed, 1/8 tsp baking powder (make sure to measure as baking powder has carbs), 1 egg, 1 tbsp melted butter, pinch of salt - mix all together and microwave on high for a minute and cut in half to make a top and a bottom bun. AWESOME for sandwiches!
                        I upped the baking powder to 1/4 teaspoon. And in the future I will use 1/2 egg and 1 T cream to keep it from being a little eggy.

                        Also, I had to microwave mine for 80 seconds since I have a 900 watt microwave.

                          Here is the thread for it -- it's 2 carbs per slice but that's with just meat toppings, I made the queso crust (I just chunked up the cheese & pressed it into the 8x8 glass pan I was making it in cooked it then added 1/4 c homemade sauce, 2 oz lean hamburger, 20 pepperoni, 2 oz canadian bacon, 1/2 c green peppers, 1/4 c onion and 1/2 c mozzarella cheese on top....anyway I put it into Fitday and it came out 238 calories and 6 carbs per slice.



                          I went back to recheck the thread and you were there Sunny...LOL -- you just forgot!

                            Yes I was there!!!!

                            I think what threw me was I have never used the frying cheese before. I saw it at the grocery store, though, but passed it by as I wasn't sure what to do with it.

                            I made the cauliflower crust pizza the other day. I used fresh, soft mozzarella instead of the pressed kind and my crust was so soggy and wet that the whole thing was mushy. But it was still good. DH laughed and called it cheese pie.
