Breakfast: omelette incorporating 1/8c each of sliced, sautéed Crimini mushroom and diced red bell pepper

Lunch: French Onion Soup; scale down the recipe for 1 serving as follows:
  • 1c onion - thinly sliced
  • 1/2 tablespoon of unsalted butter
  • 1/2 tablespoon of olive oil
  • omit sugar
  • 1 cup of beef stock (or vegetable stock)
  • omit brandy
  • 1/12 teaspoon of dijon mustard
  • 1/6 teaspoon of salt
  • 1/12 teaspoon of black pepper
  • omit bread
  • 2 slices of Swiss cheese


Dinner: include salad made of 1c shredded romaine, 1/8c each sliced Crimini mushroom and diced celery and 1/4c each sliced radish and cucumber
