I'm getting my flax fix this morning with the quick muffin-in-a-cup thingy:
1/4 c. ground flaxmeal
1 pkt Splenda
1/2 t. baking powder
1 egg
1 pat butter
Mix dry ingredients in a cup. Stir in the wet. Nuke for one minute. I had mine with cream cheese and butter. Mercy sakes that was tasty.
Thinking about flaxmeal crust pizza I made a while back...
1 and 1/2 C flax seed meal
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon oregano
Sweetener to equal about 1 Tablespoon of sugar
3 Tablespoons of oil
3 eggs
1/2 C water
Let it thicken for 5 mins then back 18 mins at 425... add the toppings and PIZZA!
Sipping away... onward and upward (or downward as the case may be)

There is another post on this site that talks about stalls and issues with flax. I just wanted to bring that to your attention. I too have loved the flax muffins at one time... So I know that they are good. - Just be careful.
