Just sitting here marveling at my amazing ability to consume food, glancing over yesterday's menus. Today my appetite is much more manageable. So far, anyhow.
Breakfast:
2 flaxmeal muffins with 2 T cream cheese
Lunch:
2 hamburger patties
spicy mustard and mayo
homemade cream of mushroom and cauliflower soup
Supper:
will most likely be roast beef with cole slaw...
I updated a recipe for cream of mushroom soup:
In olive oil saute a chopped onion and 3 cloves of garlic (minced) until translucent. Pour in a quart of chicken stock. Add 2 lbs sliced mushrooms. Bring to a boil for 2 mins. Remove from heat for about 15 to 30 mins then process in a blender. Add a cup of cream.
Also made cauliflower faux taters except they turned out kinda runny... so stirred them into the mushroom soup.

Mmmmm, cauliflower taters, I tend to put a bit too much garlic powder in mine (i love garlic mashed potatoes). Not a HUGE fan of mushroom soup, but the rest of the menu looks yum!
