Got off work about 11:30 and headed to the grocery store. I had decided to prepare a pot roast with celery, onion, mushrooms and turnips... and try out a pumpkin cheesecake recipe. If it turns out I'm taking it to Texas for Thanksgiving.
For some odd reason I thought parsnips were low-carb... no idea why. I've not eaten parsnips since the last time I made chicken soup. I have this amazing recipe for Jewish Penicillin, a chicken soup guaranteed to CURE any crud even for my Roman Catholic self hehehe
Anyhow so I threw a couple four or five parsnips in there and went about other business. Now several hours later it started bugging me if parsnips were on the list.
Turns out they're right up there in the same GI as corn. Dang.
I fished the parsnips out of the crock pot. They still seemed pretty firm, so I doubt much damage was done. The cheesecake's due to come out of the oven in about 30 mins. The house smells amazing...

Yeah, turnips and parsnips..I was thinking of making them roasted for Thanksgiving and then saw how high in carbs they were. Still trying to figure out what to do for the big day.
