Went to Byzantine liturgy last night, so having a lazy Sunday morning. I decided to try something new: flaxmeal crackers:
1 c. flaxmeal
1.5 oz parmesan
1.5 tsp garlic powder
1/3 c. water
Mix together and let sit a minute or two. Cover a baking sheet with parchment then with the large end of a melon baller scoop balls of the dough. Sprinkle each with ground rosemary and basil.
With another piece of parchment flatten the balls of dough. They'll be about the size of a Ritz. Bake at 400 for 15 to 20 mins, but watch that they not burn.
They smell amazing already.
Brunch:
3 scrambled eggs with sprinkling of monterey jack, 6 diced and fried radishes, 4 slices bacon
I hear the crackers are fabulous and if I go nuts on them and eat all 36 crackers I'm only eating 5 net carbs. That's according to FitDay. I'm pleased.
I still wanna buy a muffin top pan so I can try making those flaxmeal sandwich buns. Thing is, I think Michelle is right. I think skipping rungs to eat the low-carb tortillas wasn't wise. I put the remaining wraps in the freezer.
