Made this curried pumpkin soup tonight and ohhhhhhhhhhhh my. Thing is I've heard it's good but never believed it. Believe it. Mercy mercy.
Saute a chopped medium onion and a couple cloves of crushed garlic in some olive oil. Add 2 quarts of chicken broth, 2 15 oz cans pumpkin then spice it up:
2 T curry powder
2 t ground cumin
1 t ground ginger
1 t ground coriander
1 1/2 t salt
1/2 t red pepper flakes
1/8 t ground cardamom
Cook about 20 to 30 mins then in small batches process in a blender. I'm pretty sure it's about 5 net carbs a cup according to FitDay.
So I'm digesting my soup, thinking about how good it felt to finally get down to 252 and my first short-term goal of 249 in sight... my GSD and yellow lab snoring on the floor and two cats sleeping perched like sphinx on the back of the couch and typing on the laptop... I've been going to bed at a decent time and sleeping the night through without interruption of reflux... And not feeling as foggy at work, certainly not hitting glycemic highs and crashes.
I still want to get the exercise going but haven't... didn't make my squats goal this month, not even close.
Missing days of blogging, though, I tend to forget why I take this WOE so seriously. I tend to forget it's not just about the weight loss. And I tend to forget I don't have to do this alone.

That Pumpkin soup sounds sooooo good! I may have to try that.
