    Spicy Sausage Cheese Balls

    1 1/2 pounds hot sausage(the bulk kind that comes in rolls)
    1 1/2 cups Atkins baking mix
    4 cups shredded cheddar cheese
    1/3 cup jalapeno(optional)
    1/3 cup onion(optional)
    garlic powder to taste (I left this out)
    chili powder to taste (I left this out)

    Mix all ingredients thoroughly. Form into 1" balls and place on
    ungreased cookie sheet(use one with sides as some grease bakes out). Bake at 375 for approx. 15 minutes or until golden brown.

    At 1" this makes about 60 balls. I baked them for about 20-30 so keep
    an eye on them. (*** this made 80 balls for me)

    Note: I left out the optional ingredients to make less carbs. This
    ends up being 2 carbs for 4 balls.

    You could also freeze some to cook later or cook them all and freeze
    some to microwave for snacks.

      That sound great! I'll leave out the baking mix (because I don't know how to get it) and the other ingredients that you left out. This should be pretty good.

          Hello there, I am new to the message board- I wanted to know can you leave out the atkins mix if wanted. I am on my 15th day of induction and have mixed reply's on if I can have low carb things or just stick to the acceptable food list. Thank you!
