  • Breaded Chicken Strips

    Just a cool Idea I had the other night when I had a craving for Chicken strips. Obvously I can't have the normal strips they serve at the fast food restraunts. So I got to thinking.

    Here's the recipe

    Ingredients
    1 bag of chicken strip (or whole breasts if you want to cut them up yourself)
    2 eggs (well beaten)
    Couple hand fulls of plain Pork Rinds (crush by hand or in blender to make the breading)

    Directions

    Boil the chicken untill it is fully cooked

    Salt and pepper the chicken (heavy on the pepper and light on the salt)

    Dip chicken strips into the eggs and then roll them into the pork rind breading.

    Deep fry on 360 for 3 minutes.

    Serve with high fat low carb dip of your choice.

          Those look great!

          Btw, you may not need to boil the chicken first. Strips, as long as they're not too big/wide, cook pretty quickly in the deep fryer.

          As long as you aren't starting off with frozen (or semi frozen) strips, 3 minutes at 360 should work fine.

              They do look wonderful, but I never tasted pork rinds. I have seen them in the store, but could never get myself to try them. What do they taste like? Dawn

                I agree these are great! Dawnimmel, you don't taste the pork rinds at all (if you use the unflavored kind). I personally can't stand pork rinds or their smell, but none of that comes through on the final product.

                  Great recipe. I have a bag of pork rinds and I was thinking that they would make a great breading. Thanks for sharing

                    I tried it too!! How strange the taste of pork rinds is minimal. I ate one b4 I crushed them up and it was disgusting! YUCK!

                    I'm going to do this with some Brie at some point this week too.

                          Just tried these myself tonight, what a great recipe!!!

                          I felt like I was cheating almost, I think it really satisfied my "appetite" for something breaded.

                              I would make these using Parmesan cheese instead of the pork rinds, but if you deep fry, how do you figure in the calories/fat from the cooking oil?
                              You can't actually empty the fryer and measure the remaining oil. Is there an approximate count out there somewhere you can add to a food that you deep fry?
