    I tried the ice cream and it was soooooo good, I used half and half though because there was less fat and counted that for my carbs for the day. I added mint leaves to mine and it was great! Meg

      I am confused. If you have a sealed bag inside the other bag, then shake it all up. Then remove the small sealed bad and rinse it? And then do what with it?
      Sorry, maybe I am being dense here, but I don't get it?

          Mmmm...tasty! It tasted just like ice cream! I couldn't shake it too long cuz it was burning my fingers through the bag! Weird. Why do you have to add salt with the ice? Just curious.

            salt will melt the ice and cause it to get colder, some chemical reaction, freezing the cream faster. when i make this ice cream i will often use a ziplock bag for the ingredients but then put the bag into a tupperware container with ice and salt and then shake. It's really noisy but easier to handle.

            i found this quote this morning too

            "When salt of room temperature is in contact with ice, the outer surface of the ice melts away. Subsequently, salt dissolves in the film of water on the surface of the melting ice to form brine. As the ice melts, it absorbs heat from this brine, making it colder (below zero degree Celsius). The water in the brine will not re-freeze due to the presence of salt particles. The interaction between the salt ions and the water molecules tends to separate the water molecules so that it is more difficult to arrange themselves into a fixed crystalline lattice. Thus, salt is said to lower the freezing point of water. Since the freezing point is lowered, the brine can give out more heat to the un-melted ice without being frozen. This lowers the temperature of the whole ice-salt mixture. It has been found that the addition of 29 parts common salt to 71 parts ice lower the temperature of the mixture to -21 degrees Celsius."

              freezing point depression it the term/ water will freeze at 32 F but with salt added it will go down to around 28 F which will be cold enough to make ice cream with the correct texture. otherwise the water in the cream will freeze but not all of the rest and you get a nice crunchy textured smoothie.

                  Isn't it wonderful all the things you can learn by doing Atkins. It's like a big science experiment with you body.

                  The icecream recipe sounds great. I wonder how it would taste if you added decaffinated coffee crytals. Maybe it would be better to disolve them first in a little bit of hot water.

                    I made tihs tonight with half and half. 40% of the calories - so about 165calories instead of 407! 5g total carbs though instead of 1g. Came out pretty damn good!

                      I just tried this for the first time. THANK GOD, I only made a 1/2 cup because I probably could have eaten a gallon of it. It was FABULOUS! For me, the best dessert yet!

                          I would wait till after your 2 weeks, its best to do a clean Induction.I think heavy cream is only 2 tablespoons when doing Induction. Maybe this is more for the Dairy Rung of OWL?
                          What would we do without it?

                            This is very good; especially if you substitute the vanilla extract for unsweetened cocoa powder. My only gripe is that it's very messy. I use Ziplock brand bags and they're always coming apart - it takes a lot of shaking and the stuff gets all over my hands. And when it's cold enough to eat, I end up with kinda salty ice cream because the salt from the large bag gets into the smaller one.

                              if you are getting salt in your icecream either your zipper is leaking or you forgot to rinse the bag before opening

                                No, I rinse the bag. It just leaks, from all the shaking... I guess it's too much wear & tear. :P

                                But I just realized I shouldn't be having this yet anyway, since I'm not in OWL yet... oops.
